Mongolian Beef Noodles

Ingredients
* 250g lean rump steak (all visible fat removed), thinly sliced
* 1 tsp cornflour
* 1 tsp sesame oil
* 1 medium onion, sliced
* 1 red pepper, sliced
* 2 garlic cloves, minced
* 1 tsp fresh ginger, grated
* 2 nests (120g) medium egg noodles
* 2 spring onions, sliced
* 1 tsp sesame seeds (optional)
Sauce
* 3 tbsp light soy sauce
* 1 tbsp oyster sauce
* 1 tbsp dark soy sauce
* 1 tbsp brown sweetener (or 1 tsp brown sugar)
* 1 tsp rice vinegar
* 50ml water
* ½ tsp chilli flakes (optional)
Method
1. Cook the egg noodles according to the packet instructions. Drain and rinse briefly with cold water to stop them sticking.
2. Toss the sliced steak with the cornflour until lightly coated.
3. Heat the sesame oil in a large frying pan or wok over a high heat. Cook the steak for 2â3 minutes until browned. Remove and set aside.
4. In the same pan, cook the onion and pepper for 4â5 minutes until softened. Add the garlic and ginger and cook for another 30 seconds.
5. Whisk together all the sauce ingredients and pour into the pan. Simmer for 1â2 minutes until it starts to thicken slightly.
6. Return the beef to the pan along with the cooked noodles. Toss everything together until the noodles are coated in the glossy sauce and heated through.
7. Finish with the sliced spring onions and a sprinkle of sesame seeds if using.
