Mongolian Beef Noodles

Serves: 2
Calories: ~485 per serving
Protein: ~35g per serving

Ingredients

* 250g lean rump steak (all visible fat removed), thinly sliced
* 1 tsp cornflour
* 1 tsp sesame oil
* 1 medium onion, sliced
* 1 red pepper, sliced
* 2 garlic cloves, minced
* 1 tsp fresh ginger, grated
* 2 nests (120g) medium egg noodles
* 2 spring onions, sliced
* 1 tsp sesame seeds (optional)

Sauce

* 3 tbsp light soy sauce
* 1 tbsp oyster sauce
* 1 tbsp dark soy sauce
* 1 tbsp brown sweetener (or 1 tsp brown sugar)
* 1 tsp rice vinegar
* 50ml water
* ½ tsp chilli flakes (optional)

Method

1. Cook the egg noodles according to the packet instructions. Drain and rinse briefly with cold water to stop them sticking.
2. Toss the sliced steak with the cornflour until lightly coated.
3. Heat the sesame oil in a large frying pan or wok over a high heat. Cook the steak for 2–3 minutes until browned. Remove and set aside.
4. In the same pan, cook the onion and pepper for 4–5 minutes until softened. Add the garlic and ginger and cook for another 30 seconds.
5. Whisk together all the sauce ingredients and pour into the pan. Simmer for 1–2 minutes until it starts to thicken slightly.
6. Return the beef to the pan along with the cooked noodles. Toss everything together until the noodles are coated in the glossy sauce and heated through.
7. Finish with the sliced spring onions and a sprinkle of sesame seeds if using.

“Four years ago, I started working from a little private studio with a simple goal, to create a place where people felt comfortable, supported and genuinely looked forward to exercise.

Looking around today at the photos on the wall and memories that have been created here

I realise it was never about building a gym;

It was about building this community.

A place where people could find confidence again. A place where friendships could grow. A place where hope, happiness, and a passion for life could be rediscovered through movement.

Because fitness has an incredible way of changing far more than just our bodies.

So, to celebrate four amazing years, I’d love for us to do something together.

🧡 The August Kindness Challenge 🧡

For the 31 days of August, I challenge every member of my community to complete at least one act of kindness.

This isn’t about who can do the biggest or most impressive gesture.

It’s about proving that lots of small acts, carried out by lots of good people, can create a huge ripple effect.

Once you’ve completed your act of kindness, send me a message or a photo with a little explanation of what you did.

At the end of the month, I’ll share every act of kindness (completely anonymously) so we can all see the incredible impact this community has made together.

Here are a few ideas to get you started:

American-Style Chicken Sausage & Rice Skillet

Serves 2
Nutrition (per serving)

* Calories: ~495 kcal
* Protein: ~36g
* Carbohydrates: ~38g
* Fat: ~20g
A smoky, hearty one-pan meal with seasoned chicken sausage, sweet peppers, fluffy rice and tender broccoli. Quick enough for a weeknight dinner and all for under 500 calories.

Ingredients

* 4 HECK Chicken Italia sausages, casings removed
* 1 x 250g microwave basmati rice pouch
* 1 large red pepper, diced
* 1 medium onion, diced
* 200g broccoli florets
* 2 garlic cloves, minced
* 1 tsp olive oil
* 1 tbsp tomato purĂŠe
* 1 tsp smoked paprika
* 1 tsp garlic powder
* 1 tsp onion powder
* ½ tsp dried oregano
* ½ tsp dried thyme
* Âź tsp cayenne pepper or chilli flakes (optional)
* Salt and freshly ground black pepper
* 2 tbsp water or reduced-salt chicken stock
* Sliced spring onions, to garnish (optional)

Method

1. Cook the broccoli. Bring a pan of water to the boil and cook the broccoli florets for 3–4 minutes until just tender, then drain well. Alternatively, microwave them with a splash of water for 3–4 minutes.
2. Cook the rice. Microwave the pouch of rice according to the packet instructions (usually 2 minutes), then set aside.
3. Remove the meat from the HECK sausages and discard the casings.
4. Heat the olive oil in a large non-stick frying pan over a medium-high heat. Add the sausage meat, breaking it up with a wooden spoon. Cook for 6–8 minutes until browned and slightly crispy.
5. Add the diced onion and pepper and cook for 5–6 minutes until softened.
6. Stir in the garlic and tomato purĂŠe and cook for 1 minute.
7. Add the smoked paprika, garlic powder, onion powder, oregano, thyme and cayenne (if using). Stir everything together and cook for another minute until fragrant.
8. Pour in the water or chicken stock, then add the cooked broccoli and microwave rice. Stir well until everything is evenly coated in the seasoning and heated through, about 2–3 minutes.
9. Taste and season with salt and plenty of black pepper. Scatter over sliced spring onions if using and serve immediately.

A little shoutout to Amanda today

If you’d have told Amanda a while ago that she’d be confidently chest pressing 12.5kg dumbbells, I’m not sure she’d have believed you.

But that’s exactly what happened this morning.

She picked them up, took a breath, trusted herself and got the job done. A brand new personal best. 💪🔥

Moments like this are never really about the number on the dumbbell.

There about proving to yourself that you’re stronger than you ever give yourself credit for.

And

This is what The Secret PT Room Chapeltown is all about.

It’s not full of influencers, fitness models or people chasing social media likes.

It’s full of normal people doing extraordinary things.

People who once doubted themselves, now lifting weights they never thought they could. People finding confidence they thought they’d lost. People walking a little taller, smiling a little more and realising they’re far more capable than they ever believed.

I don’t always post my clients’ achievements because, honestly, this journey isn’t about collecting likes or going viral.

It’s about helping people rediscover their strength, rebuild their confidence and prove to themselves that they can do hard things.

Amanda, you should be incredibly proud of yourself. You’re showing exactly what consistency, determination and hard work can achieve.

💙 A Day to Come Together. A Day to Make a Difference.

On Saturday 1st August, I’ll be supporting Matt’s Match & Family Fun Day at Leisure United Thorncliffe, raising money for Care of Police Survivors (COPS) – an incredible charity that supports the families of police officers and police staff who have tragically lost their lives in the line of duty.

This is so much more than a football match. It’s a chance for our community to come together, have a fantastic day out, support an amazing cause and show that no family has to face loss alone.

Creamy French Onion Soup Pasta Bake

Serves 2 | ~490 calories | ~35g protein per serving

This has all the rich, comforting flavours of French onion soup, but turned into a creamy pasta bake with a bubbling golden cheese topping.

Ingredients

* 2 medium onions, thinly sliced
* 1 tsp olive oil
* 2 garlic cloves, crushed
* 100g lean chicken breast, diced
* 70g dry high-protein pasta (or wholewheat pasta)
* 300ml beef stock
* 1 tsp Henderson’s Relish
* ½ tsp fresh thyme (or Ÿ tsp dried)
* 40g light cream cheese
* 15g grated Parmesan
* 30g Cheddar, grated
* Salt and black pepper
* Fresh parsley to finish

Method

1. Heat the oil in a non-stick pan and gently cook the onions for 20–25 minutes, stirring regularly until they’re deeply golden and caramelised.
2. Add the garlic and chicken and cook for 4–5 minutes until the chicken is sealed.
3. Pour in the beef stock, Henderson’s Relish and thyme. Simmer for 5 minutes.
4. Meanwhile, cook the pasta until just al dente. Drain and add to the pan.
5. Stir in the light cream cheese until silky and creamy.
6. Transfer everything into a small ovenproof dish.
7. Sprinkle over the Parmesan followed by the Cheddar.
8. Grill for 3–5 minutes until the cheese is bubbling and beautifully golden.
9. Finish with black pepper and chopped parsley.

Nutrition (per serving)

* Calories: ~490 kcal
* Protein: ~35g
* Carbohydrates: ~38g
* Fat: ~16g

Optional upgrades (while staying close to 500 calories)

* Swap the chicken for 150g king prawns for a lighter seafood version.
* Add mushrooms with the onions for extra flavour and volume.
* Stir in a handful of spinach just before baking.
* Sprinkle over a teaspoon of fresh thyme after grilling for an authentic French onion finish.

It pairs perfectly with a crisp green salad and feels indulgent enough that you’d never guess it’s under 500 calories.

Approximate cost per serving: ~ÂŁ1.20

For a dish that tastes like a restaurant-quality French onion pasta bake, it’s a great-value meal that’s high in protein, comforting and budget-friendly.

There comes a moment when you look in the mirror and barely recognise the person looking back.

Not because you’ve changed on the outside.

But because somewhere along the way, life asked more of you than you thought you could give.

Maybe you’ve spent years putting everyone else first.

Maybe work became overwhelming.

Maybe your confidence disappeared so gradually that you didn’t even notice until one day you realised you no longer felt like you.
