Quick Spiced Beef & Sriracha Rice Bowl

Ingredients
* 165g Ben’s Original Wholegrain Microwave Rice — ¾ of a 220g pouch
* 187.5g Tesco 5% beef mince — ¼ of a 750g pack
* ¼ avocado, diced
* ½ small onion, finely sliced into thin strips
* ¼ cucumber, diced
* ½ roasted red pepper, sliced
* 7g tomato purée
* 1 small vegetable stock cube
* 2 teaspoons paprika
* 1½ teaspoons ground cumin
* 15g sriracha
* Juice of ¼ lime
* Salt and black pepper
* Small splash of water
Method
1. Place the sliced onion in a small bowl. Add the lime juice and a generous pinch of salt. Mix everything together, lightly scrunching the onions with your hands, then leave them to soften while the beef cooks.
2. Heat a non-stick frying pan over medium-high heat. Add the beef mince and cook for 6–8 minutes, breaking it apart with a wooden spoon until browned and completely cooked through.
3. Add the tomato purée, paprika, cumin, black pepper and a small pinch of salt. Stir well and cook for around 30 seconds.
4. Crumble in the vegetable stock cube and add a small splash of water. Stir until the mince is evenly coated.
5. Add the roasted red pepper and cook for another 1–2 minutes.
6. Microwave the rice according to the packet instructions. Measure out three-quarters of the pouch and stir it through the seasoned beef.
7. Spoon everything into a bowl and top with the cucumber, avocado, quick-pickled onions and sriracha.
