Today we said goodbye to long term Sportif client Katharine who is off on a new adventure πŸ–€πŸ€
It has been 6 incredible years we’ve had the absolute privilege to have her walk thru our doors and train alongside the members here!

From day 1 Katharine has always had the biggest smile on her face, trained hard and she is the kind of person who lifts everyone up around her without even trying - always kind and encouraging!

Her commitment and consistency to her training and goals achieved over the years has been admirable and an absolute pleasure to see.

Barbell Bent Over Row ( cues πŸ‘‡πŸ½ read below )

Step Breakdown

1. Feet neutral, toes facing forward
2. Grab the bar palms facing away from you and just wider than shoulder width apart
3. Clear the rack
4. Engaged core and oats by pulling shoulder blades back and chest out as you hinge your hips back . Bringing the bar to your knee joint
5. Start movement here - keep chest out and as you pull your elbows back towards you an draw the bar to your belly button
6. Tight hold on contraction and lower straight down
7. Repeat πŸ”

Tip : I prefer supinated grip (palms facing away) this minimises trap engagement

Need an idea of what to cook to dinner! Here is an old classic of my favourite recipes! Apricot Chicken !

INGREDIENTS

Serves 4

2 onions, sliced

1 tablespoon olive oil

1 tablespoon butter

600g organic/free-range chicken breast fillets, cut into slices or chunks

6 ripe sweet apricots, cut in half, stone removed (see notes for using dried apricot) plus exta apricots for garnishing. You will need 1 cup of pureed apricots (you can also use tinned apricots)

1 cup chicken stock

1 tablespoon whole fruit apricot jam

white pepper to season

parsley to garnish

METHOD

SautΓ© the onion over a medium heat in the olive oil and butter until softened and golden.

Add the chicken and cook for a further 5 minutes.

Pour in the stock and deglaze the pan, allowing all the caramelised pan juices to combine with the stock.

Blend the apricots into a puree and pour into the pan with the chicken and onions.

Simmer for a few minutes until the chicken is cooked through.

Add the whole fruit apricot jam as well as a good grind of pepper then mix through.

Taste your sauce and adjust where necessary to your palate - adding a touch more water if necessary. Your apricot sauce should be lovely thick, tasty and glossy.

Fry the additional apricot halves in a little olive oil until caramelised and add to the chicken just before serving. Garnish with parsley.

🍽️ Serve at the table with your choice of sides. We love steamed jasmine rice, green beans or mashed potato.
