Sometimes maybe good, sometimes maybe 💩 protein lava cake

Ingredients
227g cottage cheese (half a 450g tub)
• 2 eggs
• 24-32g powdered monkfruit sweetener (or sweetener of
choice)
21g cacao powder (use 18g for less richness)
• ~5ml vanilla extract
• Optional: sugar-free chocolate chips
Method
1. Blend cottage cheese in a small food processor until smooth.
2. Transfer to a small oven-safe bowl.
3. Crack in 2 eggs and stir to combine.
4. Add cacao powder and sweetener. Make sure the
sweetener is powdered - this is key.
5. Add vanilla extract and mix until you have a smooth batter.
6. Sprinkle chocolate chips on top, then gently shake the bowl
so they partially sink in for that lava cake effect.
7. Bake at 175°C for 33-35 minutes.

Remove and cool for 2-3 minutes before eating.

HIGH PROTEIN TIRAMISU

Recipe below!

Ingredients: (serves 2)
200g Vanilla High Protein Yoghurt
30g Light Cream Cheese
35g Vanilla WPC
80g Lady Finger Biscuits

2 Shots Espresso - sweetened to your liking
15g Cocoa Powder - to top

Method:
1. In a mixing bowl combine yogurt with cream cheese until smooth.
2. Once smooth, add your protein and mix until smooth again.
3. In a separate bowl add your sweetened coffee.
4. Place a lady finger into the coffee briefly, giving it a quick flip and removing.
5. Place into a container of your choosing, and rinse and repeat this step for half of your biscuits.
6. Add a layer of your cream mixture on top of your biscuits.
7. Repeat the biscuit layer.
8. Repeat the cream layer, then top with cling film or a lid and place in the fridge overnight.
9. When ready to serve, top with cocoa powder and enjoy.

INGREDIENTS
2 ripe bananas
2 cups unsweetened shredded coconut
½ cup chocolate chips
INSTRUCTIONS
1. Preheat the oven to 350°F 175c and line a baking sheet with parchment paper.
2. In a large bowl, mash the bananas. Add the shredded coconut and use a fork to mix with the bananas until well combined.
3. Using a medium 1.5 tablespoon spring-loaded cookie scoop, scoop a rounded ball of cookie dough and place it on the prepared baking sheets, leaving about 2 inches of space between each. Makes 12-13 cookies.
4. Meanwhile, place the chocolate chips in a small bowl and microwave in 20-second bursts, stirring each time, until smooth and runny.
5. Bake for 12-15 minutes or until the cookies look set and the coconut is golden. Drizzle with melted chocolate and refrigerate for 30 minutes.
