Sometimes maybe good, sometimes maybe 💩 protein lava cake
Ingredients
227g cottage cheese (half a 450g tub)
• 2 eggs
• 24-32g powdered monkfruit sweetener (or sweetener of
choice)
21g cacao powder (use 18g for less richness)
• ~5ml vanilla extract
• Optional: sugar-free chocolate chips
Method
1. Blend cottage cheese in a small food processor until smooth.
2. Transfer to a small oven-safe bowl.
3. Crack in 2 eggs and stir to combine.
4. Add cacao powder and sweetener. Make sure the
sweetener is powdered - this is key.
5. Add vanilla extract and mix until you have a smooth batter.
6. Sprinkle chocolate chips on top, then gently shake the bowl
so they partially sink in for that lava cake effect.
7. Bake at 175°C for 33-35 minutes.

Remove and cool for 2-3 minutes before eating.
