French Style Baked Leeks

Ingredients

4 large leeks white and pale green parts only
1 tsp extra virgin olive oil for greasing the baking dish
1 small French shallot/eschalot finely diced
4 garlic cloves finely minced
1/2 cup milk
1 cup light cream
1 tsp Dijon mustard
1 tbsp fresh thyme leaves
⅓ cup grated Gruyère cheese or cheddar-style cheese
2 tbsp finely grated parmesan
Pinch freshly grated nutmeg
Salt and cracked black pepper

Directions

1. Preheat oven to 350 degree.
2. Trim off the roots and dark green from the leeks. Wash throughly to remove any dirt.
3. Grease the baking dish lightly with the olive oil. Then cut the leeks into 2 cm lengths and arrange them in a baking dish.
4. To make the sauce mix together the diced shallot, minced garlic, milk, cream, Dijon, Gruyere, thyme and nutmeg, and season generously with salt and pepper.
5. Pour sauce evenly over the top of the leeks.
6. Bake for 30 minutes covered and then for a further 30 minutes uncovered or until tender, bubbling and golden.
7. Remove from oven and sprinkle on parmesan evenly. 8. Rest 5 minutes before serving and enjoy!

SPICY WATERMELON SALAD 🍉🥵

Ingredients:

1 small watermelon, cubed
1 small jalapeño, thinly sliced
Juice from ½ lime
2 tbsp olive oil, drizzled
1 tbsp honey, drizzled
¾ tsp Tajín
¼ tsp salt
¾ cup crumbled feta
2 tbsp finely chopped fresh mint

Directions:

1. Cube the watermelon and add it to a large serving bowl.
2. Top with sliced jalapeño.
3. Drizzle olive oil, honey, and lime juice all over the watermelon.
4. Sprinkle with Tajín and salt.
5. Add the feta and chopped mint on top.
6. Gently toss everything together right before serving.
