Here's your KirbyCo Builders' Cooking Tip of the Week:

Captain Kirk’s braised short ribs!

🥩 Pat the short ribs dry and season generously with kosher salt and black pepper.
🔥 Heat oil in a Dutch oven and sear the ribs on all sides until deeply browned. Remove and set aside.
🥕 Sauté chopped onions, carrots and celery in the remaining fat until soft. Stir in tomato paste and cook for a few minutes.
🍷 Add dry red wine or port, scraping up all those flavorful browned bits from the bottom.
🌿 Add beef stock, thyme and bay leaves, then return the ribs to the pot. The liquid should partially submerge the meat—not completely cover it.
⏰ Cover and braise at 325°F until the ribs are incredibly tender and practically falling off the bone.
