Cold Lunch prep for the week:

For the wrap:
1lb chicken breast, grilled & sliced
1.5c red cabbage, sliced
4 Persian cucumbers, thin sliced
1c shredded carrots
Fresh cilantro & mint (to your heart's desire)
Optional: butter lettuce leaves
Large wraps or tortillas

For the wrap:
1lb chicken breast, grilled & sliced
1.5c red cabbage, sliced

Large wraps or tortillas

In a small bowl, stir together all sauce ingredients, gradually adding water to thin. Set aside. Take a large wrap or tortilla and place veggies and chicken in the center of the wrap, lining with lettuce first to prevent the wrap from getting soggy. Top with sauce and roll it up like a burrito. Cut in half and store individually in aluminum foil and place in the fridge until ready to eat!
