Sweet Chilli Salmon Traybake 🙌🏼

Next on traybake series

One tray. Minimal effort. Loads of flavour.

This is probably the nicest salmon meal prep I’ve ever made 👌🏻

🛒 Ingredients (Serves 4)

* 4 salmon fillets
* 160g wholegrain rice (dry)
* 400g broccoli
* 2 peppers
* 1 courgette
* 80g reduced sugar sweet chilli sauce
* 40ml soy sauce
* 10g olive oil
* 2 tsp garlic powder
* Chilli flakes
* Salt & pepper

Method

1️⃣ Cook your rice according to packet instructions.

2️⃣ Add peppers and broccoli to a tray with olive oil, salt and pepper. Into the oven at 200°C for 15 mins.

3️⃣ Mix together:

* sweet chilli sauce
* soy sauce
* garlic powder
* chilli flakes

4️⃣ Add salmon onto the tray, coat with the sauce and back into the oven for 15 mins.

5️⃣ Split between 4 containers with rice and spoon over any extra sauce from the tray

* Calories: 470 kcal
* Protein: 40g
* Carbs: 35g
* Fat: 18g
* Fibre: 6g

🍗 BBQ Chicken & Veg Traybake (Featuring my assistant Arlo-1.5years old) 👶

Real-life meal prep featuring a toddler assistant for parts of this one, no point in pretending the house isn’t manic😂

4 high-protein lunches done with minimal effort and honestly this tastes like proper comfort food.

Perfect for busy weeks when you want something filling, tasty and easy to throw together.

Ingredients (Serves 4)

* 700g chicken breast
* 700g baby potatoes
* 2 peppers
* 2 onions
* 120g ‘reduced sugar’ BBQ sauce
* 20g olive oil
* 2 tsp garlic powder
* 2 tsp paprika
* Salt & pepper

Method

1️⃣ Preheat oven to 200°C

2️⃣ Quarter the baby potatoes and season with:

* 10g olive oil
* 1 tsp paprika
* salt & pepper

Into the oven for 20 mins.

3️⃣ While they cook:

* slice peppers & onions
* dice chicken breast

Season chicken with:

* 2 tsp garlic powder
* 1 tsp paprika
* salt & pepper

Mix through half the BBQ sauce.

4️⃣ After 20 mins, add the chicken and veg onto the tray and back into the oven for 18 mins.

5️⃣ Finish with the remaining BBQ sauce and cook for another 4-5 mins until sticky and caramelised.

* ~480 kcal
* ~44g protein
* ~47g carbs
* ~9g fat
* ~6g fibre

Hot Honey Chicken Traybake 🌶️ 🍯

4 high-protein lunches done in just over 30 minutes and this genuinely taste unreal 👌

Ingredients (Serves 4)

• 700g chicken breast
• 700g baby potatoes
• 400g broccoli
• 20g olive oil
• 60g hot honey
• 2 tsp paprika
• 2 tsp garlic powder
• Chilli flakes
• Salt & pepper

Method

1️⃣ Preheat oven to 200°C

2️⃣ Halve your baby potatoes and toss with:
• 10g olive oil
• salt & pepper
• 1 tsp paprika

Onto a tray and into the oven for 20 mins.

3️⃣ While the potatoes cook, prep your broccoli into florets.

4️⃣ Season diced chicken with:
• remaining paprika
• garlic powder
• salt & pepper
• chilli flakes (as much or as little as you like)
• remaining olive oil

5️⃣ After 20 mins, remove tray and add:
• chicken
• broccoli

Mix and return to oven for 18 mins.

6️⃣ Drizzle over the hot honey, toss everything together, then back into the oven for 3 mins until sticky/glossy.

Per Meal Macros (Approx)
• 462 kcal
• 44-46g protein
• 49g carbs
• 9g fat
• 7g fibre

Swimming has humbled me more than any gym session ever could.

I’m 38, I coach people for a living, I’ve “done” a triathlon… and I still walked back into swim lessons feeling nervous as f**k…

But here’s the thing,growth doesn’t happen where you feel comfortable.

A lot of people think they need to be fit before they start. Or confident before they try. Truth is, sometimes you just have to be willing to be s**t at something long enough to improve at it.

So if there’s something you’ve been putting off because it scares you a bit… maybe this is your sign to start. 🌊

High-protein fakeaway spice bag 🌶️🔥
Around 500 calories with 50g protein per serving

Save this one 👇

INGREDIENTS (2 servings)

Chicken:
- 400g chicken breast
- 1 tbsp cornflour
- Garlic powder tsp
- Smoked paprika tsp
- Chilli flakes 1/2 tsp
- Salt & pepper

Chips:
- 450g potatoes
- Paprika tsp
- Garlic powder tsp
- Salt & pepper

Veg:
- 2 peppers
- 1 onion

Spice bag seasoning (after cooking):
- Chinese 5 spice tsp
- Chilli flakes 1/2 tsp (or less if you don’t like a burnt tongue)👅
- Garlic salt

Optional extras:
- Soy sauce
- Lime

METHOD (quick):
- Parboil chips 7 mins → season → air fryer 180°C ~20 mins
- Chicken in after 10 mins → 180°C 10–12 mins
- Add veg last 5 mins
- Toss everything with spice mix at the end

I put it back into air fryer for about 3 mins, I think it made a difference 👌🏻
