Grilled Shrimp with Black Beans
Yields: 4 main-dish servings
Total Time: 18 min
Prep Time: 15 min
Cook Time: 3 min
1 lime
2 can(s) (15 to 19 ounces each) black beans, rinsed and drained
2 ripe plum tomatoes, chopped
2 green onions, thinly sliced
1 small yellow pepper, seeded and chopped
1 jalapeño chile, seeded and finely chopped
1/2 cup(s) (loosely packed) fresh cilantro leaves, chopped
1 tablespoon(s) olive oil
3/4 teaspoon(s) salt
1 pound(s) large shrimp, shelled and deveined
Lime wedges

Prepare charcoal fire or preheat gas grill for direct grilling over medium-high heat.
Meanwhile, from lime, grate 1/2 teaspoon peel and squeeze 2 tablespoons juice. In large bowl, stir lime juice and 1/4 teaspoon lime peel with beans, tomatoes, green onions, pepper, jalapeño, cilantro, oil, and 1/2 teaspoon salt. Set aside at room temperature. Makes about 5 cups.
In medium bowl, toss shrimp with remaining 1/4 teaspoon lime peel and 1/4 teaspoon salt. Place shrimp on hot grill rack (or hot flat grill topper) and cook 3 to 4 minutes or just until shrimp turn opaque throughout, turning shrimp over once.
Stir about half of shrimp into bean salad; top with remaining shrimp. Serve with lime wed

Beautiful upcoming weekend for some grill action!

An easy, delish recipe that comes in at under 300kcal per serving.

Grilled Chicken Bruschetta
Serves 4
3 medium vine ripe tomatoes
2 small cloves garlic, minced
1/4 cup chopped red onion
2 tbsp fresh basil leaves, chopped
1 tbsp extra virgin oil
1 tbsp balsamic vinegar
Sea salt and fresh cracked pepper to taste
3 oz part skim mozzarella, diced
1.25 lbs chicken/ approx 8 thin sliced chicken cutlets
Combine onion, olive oil, balsamic, 1/4 tsp sea salt and pepper. Set aside a few minutes.
Chop tomatoes and place in a large bowl. Combine with garlic, basil, onion-balsamic combo and additional 1/8 tsp salt and pepper to taste. Set aside and let it sit at least 10 minutes or as long as overnight.
Toss in the cheese when ready to serve.
Season chicken with salt and fresh pepper.
Preheat the grill to medium-high, clean and oil the grates to prevent sticking.
Grill the chicken 2 minutes on each side, set aside on a platter and top with bruschetta and serve..yum!!
