WILD TABLE WEDNESDAY: POMEGRANATE DUCK

Crisp skin, rosy wild duck, roasted acorn squash and a sweet-tart pomegranate pan sauce—this is the kind of fall dinner that makes the extra work of plucking the breast worth it.

Roast the squash until tender and charred around the edges. Reduce the pomegranate juice and honey while it cooks, then sear the duck skin-side down and pull it at 135°F. Finish the sauce in the same pan with shallot, port and stock.

Plate it with goat cheese, pomegranate seeds and fresh mint. The whole meal comes together in about 45 minutes.

Save this one for a good mallard or pintail.

First morning of our 2026 Canada trip. 🇨🇦🦆

Layout blinds in the stubble. Ducks over the spread. A spinner adjustment to get them centered—and my first drake wigeon.

This is why we make the drive north.

Swipe through a few moments from the hunt, from the field setup to the meal back at camp. When the rain moved in, we picked up before risking damage to the farmer’s field. A good first morning, with more scouting and more hunts ahead.

This week on The Migration Waterfowl Podcast, I’ve got a very special guest joining me — my wife, Karen!

We’ve been together for 32 years, married for 28, and through it all, she’s had a front-row seat to the madness that comes with being married to a hardcore hunter.

The early mornings, long hunting trips, countless hours in the marsh, questionable purchases, and the ups and downs of building a side hustle in the outdoor industry. She’s seen it all!

The funny thing? She’s never had any interest in hunting herself!

In this episode, we turn the tables and hear HER side of the story. We talk about marriage, raising our two daughters, the sacrifices that come with the hunting lifestyle, and what it’s really like supporting someone whose passion sometimes borders on obsession.

WILD TABLE WEDNESDAY: FIVE-SPICE GOOSE SKEWERS

If your wild goose keeps turning out tough, change the cut and shorten the cook.

This MeatEater recipe slices the breast into thin ribbons across the grain, marinates them in orange, soy and Chinese five-spice, then flash-sears the skewers over high heat. The thin strips take on plenty of flavor and cook in less than five minutes while staying pink and tender in the middle.

Finish them with grilled orange and green onion. Serve with rice and broccoli—or put the platter in the middle of the table and let everyone grab a skewer.
