The recipe makes 3 big portions but could defo stretch to 4 especially if having sides!

57g carbs, 13g fat, 62g protein
Ingredients:
Olive oil spray
500g chicken breast, diced
1 tbsp Nandoās medium rub
1 tsp dried oregano
1 tbsp tomato puree
300g carton passata
600ml low-salt chicken stock
2 tbsp Nandoās medium sauce
10 lasagne sheets, broken into thirds (170g total)
For the white sauce:
250g low-fat cottage cheese
50ml semi-skimmed milk
Salt and pepper to taste
For topping:
60g reduced fat mozzarella, torn
40g 30% less fat cheddar, grated
Fresh parsley, finely chopped
Method:
Spray a large, deep pan with some oil and add the peppers and chicken breast over a medium-high heat for around 7 minutes.
Add the Nandoās rub, the oregano and the tomato puree and stir to coat, then pour in the passata, stock and Nandoās sauce.
Stir and bring to a simmer then add in the broken lasagne sheets. Stir and make sure they are mostly submerged.
Simmer for 12 minutes, stirring every so often so the pasta sheets donāt stick together - you might need to use a spatula or a fork to peel some apart!
Meanwhile, blend the ingredients for the white sauce until smooth then pour it over the top. Scatter the cheese over the top then cover with a lid for a few minutes until melted or pop it under the grill if you like it crispy!
