With cooler temps and holidays coming, many of us will be baking more. Moist baked goods often contain a lot of oil and butter, which aren’t the healthiest choices. For moisture and fiber, substitute some fat or sugar with fruit and vegetable purees. Use unsweetened applesauce, mashed banana, or canned pumpkin. These fiber-rich additions naturally moisten baked goods. Increase dry fiber by swapping some all-purpose flour for whole-wheat or white whole-wheat flour, or by mixing in flaxseed meal, chia seeds, or oat bran. Nuts and shredded vegetables like zucchini or carrots also add great moisture and texture.

Here is this week’s healthy and easy recipe! 😊🎃

This takes no time to throw together and no one would ever guess that it’s a “healthy” treat! Thanks to the cottage cheese, which is pureed with the rest of the ingredients, it is a delicious, high protein snack. Serve with graham crackers or fresh fruit slices, such as apples or pears. Personal note: It was fantastic on sliced apples!

5 Minute Pumpkin Dip

1 ½ cups cottage cheese (4% milkfat is recommended to provide the creamiest texture)
½ cup pumpkin puree
3-4 Tablespoons honey or maple syrup
1 teaspoon vanilla
1 teaspoon pumpkin pie spice
½ teaspoon cinnamon

Add all ingredients to a food processor or blender and blend until completely smooth. Makes 4 generous servings.

Approximate nutrition per serving: 141 calories, 9g protein, 4g fat, 1g fiber, 16g sugar, 19g carbs, 251mg sodium

Late night snacking is not necessarily a bad thing, but of course it depends on what snack you choose. Any snack that has a lot of added sugar is definitely a no-no because it will cause your blood sugar to spike. That’s the last thing you want when you are trying to get a good night’s sleep. Also stay away from spicy or fried foods, which can cause indigestion. Snacking on something around 200 calories that has a combination of fiber and protein can stabilize your blood sugar and actually help you get a better night’s sleep.

Snacking is a great habit when you are eating healthy! Of course, what you snack on is extremely important. Grabbing a bag of chips or a candy bar might be okay for an occasional treat, but they won’t fill you up and keep you going till your next meal. Instead, opt for a snack full of protein and fiber like these:

-Edamame
-Greek yogurt or cottage cheese with fresh raspberries or strawberries
-Apple slices or celery sticks with natural nut butter
-String cheese, tuna or hard boiled egg with whole wheat crackers
-Raw veggies with hummus

Here is this week’s healthy and easy recipe! 😊

I had this delicious vegetarian dish while on vacation and loved it so much, I knew I had to recreate it. The original dish definitely used heavy cream and more butter, so it was challenging to come up with a healthier version. This one comes pretty close and gets an extra punch of protein thanks to the blended cottage cheese and Greek yogurt. It is very easy, but does require patience because it needs simmered over low heat. The dish I had at the restaurant served the sauce around a scoop of rice, but it can stand alone as a hearty soup.

White Bean, Spinach, Tomato and Red Pepper Bowl

2 Tablespoons unsalted butter
1 jar of roasted red peppers
1 small onion, chopped
4 garlic cloves, minced
1 cup 2% cottage cheese
½ cup plain Greek yogurt (I used 2% but you could also use full fat yogurt)
Splash of milk
1 can of roasted red tomatoes, drained
8 ounces of freshly grated gouda
2 cans white beans, drained and rinsed
2 cups baby spinach
½ teaspoon smoked paprika
1 teaspoon red pepper flakes, optional

In a blender or food processor, blend the peppers until smooth. To a deep sauce pan, add butter, onion and garlic. Simmer a few minutes, then add peppers. While that simmers, to the same food processor, add the cottage cheese, yogurt and milk. Blend until smooth. Add tomatoes to pan, then slowly add gouda. Once the gouda is melted, add the cottage cheese mixture and stir until warmed, then add the rest of the ingredients. Continue on low heat until desired temperature. Makes approximately 6 servings.

There are a million recipes out there for baked goods using pumpkin, but not all of them use the entire can. So what do you do with what’s left over? Instead of tossing it, here are some healthy ideas to use every last drop:

-Add it to any soup or sauce to not only add some nutritional value, but also to create a creaminess without using real cream

-Stir it into your morning oatmeal or plain yogurt with some cinnamon or pumpkin pie spice, a little vanilla extract and a sprinkle of brown sugar

-Stir it into macaroni and cheese! You can use less cheese and milk, yet the pumpkin still creates a creamy sauce for the pasta

-Substitute pumpkin for oil in a recipe by using a one-to-one ratio (i.e. one cup oil = one cup pumpkin)

A can of pumpkin can be mixed with either brownie mix or cake mix instead of eggs and oil. Keep a couple cans in your cupboard all year round, not just this time of year. The possibilities of pumpkin truly are endless!

Here is this week’s healthy and easy recipe! 😊

This is the basic recipe for the baked feta and tomato pasta that was such an internet sensation, but it would be even healthier and delicious with more veggies added, like zucchini or spinach! Serve it as your main dish or on the side with some grilled chicken.

Baked Feta and Tomato Pasta

1 8 oz block of feta
1 8 oz box of chickpea pasta
½ cup olive oil
2 containers of grape or cherry tomatoes (approx.. 20 oz)
2 cloves garlic, minced
1 tsp oregano
1 handful of fresh basil or 2 tsps basil paste
½ tsp red pepper flakes
Fresh ground pepper to taste
1 bag of spinach (optional)

Preheat oven to 400. Spray a 13 x 9 pan with nonstick spray. Put feta in middle of pan and surround with the tomatoes. Drizzle feta and tomatoes with olive oil (make sure the top of the feta is well covered with oil). Sprinkle pepper on tomatoes and bake for 30 minutes. While this bakes, cook the pasta according to box directions. Before draining, reserve at least one cup of the pasta water. After 30 minutes, turn oven up to 450. Bake 5-10 minutes until tomatoes and feta are well browned. Take dish out of the oven. Add garlic, oregano and basil. Using a potato masher, mash the tomatoes and feta until a sauce is formed. Stir in pasta and spinach and add pasta water until the sauce is desired consistency. Makes 4-6 servings.

For pumpkin spice lovers, we are heading into the most wonderful time of the year! When buying pumpkin for your recipes, be sure to buy 100% pure pumpkin, not pumpkin pie mix. The cans look very similar, but the mix has a lot of added sugar. Pure pumpkin packs a nutritional punch, with just a half cup containing 3 grams of fiber, 1 gram of protein, 20% of your daily potassium and 250% of your daily vitamin A, while only having 50 calories. And since pumpkin doesn’t have much flavor on its own, it will take on whatever flavoring you add to it, making it extremely versatile. Watch for some healthy ideas on how to use pumpkin next week!

Here is this week’s healthy and easy recipe! 😊☕️

Save some $$ and calories with this version of the popular PSL! If you go to your favorite coffee place, a pumpkin spice latte can cost up to $6.00 and can be almost 500 calories. Instead, make it at home and you not only will slash the calories and cost, you’ll also get a little protein, fiber and much less sugar. Not sure what to do with the rest of the can of pumpkin? Freeze two-tablespoon portions in an ice cube tray!

Pumpkin Spice Latte

¾ cup of your favorite milk, dairy or non-dairy
2 tablespoons pumpkin puree
2 teaspoons real maple syrup
1 teaspoon vanilla extract
¼ teaspoon pumpkin pie spice blend
¼ cup coffee

In a small saucepan, add the milk, pumpkin, maple syrup, vanilla and spice blend and warm over low-medium heat (if using dairy milk, make sure to keep on low heat so it doesn’t curdle). Gently stir until hot. Pour into mug and add coffee.
You can also heat and blend the milk mixture in the microwave, stopping and stirring in 30 to 45 second increments. It’ll take at least two minutes to get it hot. Makes one serving.

Approximate nutrition when made with almond milk: 80 calories, 1g protein, 2g fat, 13g carbs, 1g fiber, 10g sugar, 130mg sodium
