Back to school means back to routine. Eating well can help ease the transition from summer to busy fall schedules.

Life is chaotic, all the time. Our kids are teenagers and both involved in something after school every night. And never the same thing at the same time. So we have to plan dinners strategically.

It’s easy to get into a groove of eating the same thing every night. For us, that’s turkey tacos.

Organic ground turkey is easy, inexpensive, and healthy. Add a couple shells and it’s something both kids eat, we can easily control portion size, etc.

But after a while, even tacos lose their luster.
It’s important to get a wider variety of foods in your diet.

Here’s a few tips that have been helpful for our family:

💚 I meal plan on Friday, shop on Saturday, and prep Sunday. I start with a simple menu and ingredients list and then plan trips to the Farmer’s Market, Costco, etc. to get what’s needed. Sunday I spend time prepping all the things.

I still use a lot of ground turkey, but form it in 3 ways:

✅ I do a turkey meatloaf for one meal and use that same recipe for turkey meatloaf meatballs that our son takes for school lunch.

✅ I still do turkey tacos and then do at least one
night with turkey burgers.

✅ I get a few pounds of chicken breasts and cut and marinade those for two separate meals. One is bowls and one is simply grilled with some veggies or a salad.

With that we have at least 6 nights of simple meals that I can add a few veggies or a salad to AND cook and serve at 3 different times throughout the evening.
