POV: you're trying to eat more protein but refuse to settle for boring meals 💪

These fruity turkey meatballs are bringing the flavour, the colour and the protein 😋

Save this one for later!

For the meatballs you'll need:
- 500g turkey mince
- 1 medium courgette
- 1 medium egg
- 2 tbsp white breadcrumbs
- 100g dried apricots
- 70g feta
- Zest from 1 lemon

For the vegetable couscous you'll need:
- 150g dried couscous
- 1 medium carrot
- 150g cherry tomatoes
- 1 red pepper
- 150ml vegetable or chicken stock

For the lemon yoghurt sauce you'll need:
- 100g 0% Greek yoghurt
- 15g parsley
- Juice from 1 lemon

For cooking you'll need:
- 2 tsps of olive oil for cooking
- Salt and pepper to taste

To make:
- Preheat the oven to 190°C fan.
- To prepare your vegetables, grate the courgette, chop the apricots, slice the pepper and shred the parsley.
- In a large bowl, add in the mince, courgette, zest of 1 lemon, apricot chunks, a beaten egg, feta and breadcrumbs. Season well and mix with your hands.
- Roll the mixture into 12 evenly sized balls and lay them on a baking tray. Top tip – wet your hands before you start, as this stops the mixture from sticking to you.
- In a separate baking dish, add in the peppers, carrots and tomatoes. Drizzle over 1 teaspoon of olive oil and ensure that everything is coated.
- Bake both the vegetables and meatballs for 20 to 25 minutes.
- While this is cooking, make your yoghurt sauce. Mix the yoghurt, parsley and the juice of 1 lemon, then season to taste with salt and pepper.
- Move onto the couscous. Tip the couscous into a heatproof bowl and stir in 150ml of stock. Cover the bowl with a plate or cling film and set aside for 10 minutes. Uncover and fluff the grains with a fork, then stir in the roasted vegetables.
- To serve, place the meatballs over the couscous and drizzle over the herby yoghurt sauce.

Member Focus:

One of our most loyal and regular members, Dean Common, is taking on an absolutely amazing challenge this month. Please take a moment to read Dean's words below. Any donations to his cause would be hugely appreciated:

"I just wanted to take a moment to say a huge thank you for all your support during my training for an incredible challenge I’m taking on this October.

I’ll be trekking to Everest Base Camp, reaching around 18,000 ft above sea level, to raise money for Alzheimer’s Society. It’s something I’m really excited about, but it has definitely required a lot of preparation and training!
I’ve spent a lot of time training at PureGym in preparation for the trek, and I really appreciate the facilities, support and advice- especially from Chris (PureGym Manager), that have helped me get ready for such a huge challenge. The training has helped me build my strength, fitness and confidence, and I’m so grateful to have had PureGym as part of my journey.
Thank you again for all your support — I’ll definitely be thinking of all those training sessions when I’m making my way up to Base Camp!"

Your next fakeaway just got an upgrade 🙌

Comfort food, BBQ flavour, and 16g of plant-based protein per serving - we're sold 😍

For the BBQ tofu buns you'll need:
- 280g tofu
- 5 tbsp ketchup
- 2 tsp brown sugar
- 1 tsp balsamic vinegar
- 1.5 tsp smoked paprika
- Salt and pepper
- 4 burger buns

For the slaw you'll need:
- 1/2 red onion
- 1/2 white cabbage
- 2 medium carrots
- 70g plant-based yoghurt
- 1 tsp Dijon mustard
- 1 lemon
- 30g fresh parsley

For the sweet potato wedges you'll need:
- 1 sweet potato
- 1 tbsp olive oil
- Salt and pepper

To make:
- Preheat the oven to 200°C fan.
- Prepare your ingredients, slice the potatoes into wedges, add them to a baking tray, drizzle with olive oil and season with salt and pepper. - Add them to the oven and roast for 25-35 minutes, turning once and removing when crisp. Remember, the bigger the wedges, the longer they’ll need.
- Meanwhile, make the BBQ sauce, mix ketchup, light brown sugar, balsamic vinegar and smoked paprika, then add a pinch of salt and pepper and set aside.
- Grate the tofu and add it to the BBQ sauce. Spread the mixture onto a baking tray and roast for 20-25 minutes.
- Time to make the coleslaw, mix the plant-based yoghurt with shredded parsley, mustard and lemon juice, shredded carrot, cabbage, onion and stir until combined.
- Toast the burger buns and add the tofu and slaw. Serve with the sweet potato wedges.
