Summer is here. The marsh is alive and the offshore bite is ON.

INSHORE: Bull reds are schooling in the shallows — sight-fish with soft plastics and topwater early morning before the heat sets in. Speckled trout are holding in cooler, deeper pockets mid-day. Move to current edges and marsh grass lines when the tide is running. Live shrimp and paddle tails are producing.

OFFSHORE: This is prime yellowfin tuna season. Fish are holding at the shelf and beyond — 30-mile runs putting you on 40-80 lb class fish when sea conditions cooperate. Blackfin are mixed in closer. Bring heavy gear and be ready for doubles.

BONUS: Bowfishing season is in full swing. Night trips on the flats = target-rich environments.

May in Venice is the full package and everything is biting.

Inshore, slot reds are hitting limits on artificials and live bait. Speckled trout are in their spawn aggressive and predictable.

Flounder are mixing in. Work current edges, clean pockets, and marsh structure. Early morning bites are dialed in.

Offshore is wide open. Yellowfin are stacked at the rigs. Mahi-mahi are showing up on w**d lines. Wahoo still in the mix for trophy seekers. Tuna, mahi, wahoo — all in one run. That's a May Venice box.

INSHORE: Slot reds + trout on the spawn + flounder. Artificials and live bait both producing.

OFFSHORE: Yellowfin at the rigs, mahi on w**d lines, wahoo on the troll.

Cajun blackened red snapper

Red snapper season opens may 1st. This is how we cook them at saltgrass lodge

For the fish:
• 4 fresh red snapper fillets (6-8 oz each) • 1½ cups clarified butter, melted • 1 lemon, sliced • fresh parsley for garnish
For the creole butter sauce (optional but deadly):
• 4 tbsp butter • 2 cloves garlic, minced • 2 tbsp worcestershire sauce • 1 tbsp hot sauce • juice of half a lemon
The method
Make the spice blend: mix all spices together in a bowl. Make extra — you'll use it on everything.

Heat your skillet: get a cast iron skillet screaming hot. We're talking 10 minutes over high heat. This is non-negotiable. The blackening process requires extreme heat.
Prep the fish: pat snapper fillets completely dry. Dip each fillet in melted butter, coating both sides. Press the spice blend generously onto both sides — don't be shy.
Cook: lay fillets in the dry, hot skillet. Pour one tablespoon of butter over each fillet. Cook 3-4 minutes until the bottom crust turns deep black. Flip. Pour another tablespoon of butter. Cook 2-3 minutes more. The fish is done when it flakes easily at the thickest point.

Make the sauce: in a separate pan, melt butter, sauté garlic 30 seconds, add worcestershire, hot sauce, and lemon juice. Stir together and pour over plated fish.

The result
Crispy, blackened exterior. Flaky, sweet red snapper inside. Pure louisiana. This is what we serve at saltgrass after a day on the gulf — and it tastes even better when you caught it yourself.

"best fishing trip of my life, and i've been fishing for 35 years. We came as a group of 8 guys — a mix of experienced anglers and a few first-timers. Captain ike and the guides made sure everyone stayed on the bite all day long. Limits of bull reds in the morning, offshore for yellowfin in the afternoon. The lodge itself blew us away — gourmet meals, a pool, rooms that rival any hotel. Raymond runs a tight ship and his passion for this place comes through in every detail. We're already booked for the fall. If you're on the fence, get off the fence. This place is the real deal."

We had a short break in the winds this morning, then they started blowing later on….again. The tide was weak and the water is still a little dirty.
It didn’t matter. Ike and Chief had a great day. It wasn’t an every cast kind of day, but it was semi-consistent and a couple of good fish boxes were put together.
From the bayou….tight lines and safe boating to all!
