They lose money because creativity enters the menu without a system. New flavours look exciting… but if they increase waste, confuse staff, slow service, or break consistency ... it’s not innovation. It’s operational chaos. Smart founders don’t stop experimenting. They experiment inside a controlled system.
Keep your winners stable. Test new ideas in small batches. Track response. Kill fast.
Scale only what repeats well. Because in food business, creativity gets attention… but repeatability builds profit.
