Protein Chocolate Chip Banana Bread Muffins⁣⁣

4 tablespoons butter (melted then let cool a bit)
1 teaspoon vanilla extract ⁣
2 egg⁣s
2 medium ripe bananas, mashed up (if they are small bananas use 3)
1/3 cup honey
1/2 cup Fairlife skim milk
1 cup whole wheat flour
2 scoops vanilla casein protein powder (I used R1 vanilla crème)
1 teaspoon baking soda⁣
1 1/2 teaspoons cinnamon
1/2 teaspoon salt⁣
1/2 cup milk chocolate chocolate chips

Preheat oven to 350F.⁣

Put bananas, margarine, honey, vanilla, eggs and milk in bowl and mix/whisk together. Then stir in dry ingredients (flour, protein powder, baking soda, cinnamon and salt). Lastly, mix in your chocolate chips.⁣ The batter will be thick once’s you’ve mixed everything together.

Line muffin tins with liners. Fill muffin cups to the top of the liner.

This recipe makes 12 regular sized muffins. ⁣

Bake for approx. 16-18 minutes at 350F. Mine took 18 min but everyone’s oven is a little different so just keep an eye on them once you hit that 14-15 min mark!

Notes:
*with protein baking I always recommend using muffin liners as it sticks a little more than normal baking
*expect a denser muffin when cooking with protein
*recommend using on casein protein powder for baking, as it bakes much better and isn’t dry once baked as whey protein powders

Here’s a little motivation and reminder that your age has nothing to do with what you’re capable of if you put your mind to it! When it comes to fat loss lot of the times I hear “it’s too late me” or “there’s no hope for me at this point” but I promise you that is the farthest things from the truth!

To prove my point, at 60 years old my beautiful client D made an amazing transformation in 12 weeks. Her main reason for coming to me for help was so that she could head into this years fire season feeling a lot better physically and I think she’s well on her way! By the end of the 12 weeks she had even started running again and was making great progress on that as well which I think is truly amazing 👏🏻🙌🏻 I’m beyond proud of what she was able to accomplish 😀

➡️Down 21.8 lbs and lots of inches in 12 weeks
➡️Not restricting any foods, just being mindful and eating mostly whole foods and making sure she was eating enough protein
➡️Weight/strength training 4x a week with minimal cardio
➡️Daily step goal
➡️Weekly check-ins for accountability

The last 3 months have been a bit different for me.

It’s taken me a long time to get up the courage to tell this story, and I’m not telling my story for anyone to feel sorry for me but instead to remind you to do the things you love more often, have fun while you can, move your body while you can, and go make your healthy a priority now and not tomorrow, because you never know when something unexpected could happen that will leave you wishing that you could still do all of those things!

I’ll try to make this as sort as possible, but bear with me as it’s a long story!

On November 15, I went in for spinal nerve block/steroid injections in lower spine. I’ve had them done previously so didn’t expect it to be any different this time around. Unfortunately this time, that was not the case. During the procedure which is done under local anesthetic and ultrasound guidance I started to feel sick and became very nauseous and broke out in extreme sweats. I let the doctor know right away and he just said that it was just because it’s hot in the room so he opened the door a bit to cool the room down. That didn’t help any. Shortly after that he must have went too deep with the needle past the freezing or hit a nerve which basically caused me to jolt quite a bit. He told me not to move (I wouldn’t have if he didn’t just hurt me 🤦🏼‍♀️ it was so painful!). He eventually finished and left the room. Once he left I went to get up off the table and the second I went yo get up I was hit with the worst head pain I have ever experienced. It was like 100/10. They told me it would go away in 20 minutes and I’d be fine.

It didn’t go away. 2 days later a CT scan revealed that the doctor who did the injections had injected air into my spinal fluid during the procedure. When I went to get up off the table after the procedure, that air must have travelled up my spinal fluid to around my brain causing the most wicked headache ever. They gave be pain meds and sent me home and said that my body will eventually absorb the air but couldn’t give me any idea as to how long that would take. For about 2 weeks after the procedure my headache was so bad I hardly moved from my bed. Continued ⬇️

🚨RECIPE BELOW🚨 I received lots of requests for this recipe so here it is 😅

EGG BITES

12 slices Naturals Black Forest Ham
1 onion, diced
1 jalapeño, diced (or could used 1/2 green pepper instead if you don’t like any heat)
1 tomato, diced
6 eggs
1 1/2 cups egg whites
120 grams of light shredded cheese

1. Preheat oven to 375F.
2. Sauté onions and jalapeño in pan with cooking spray until cooked.
3. Spray muffin tins with cooking spray to help prevent the egg from sticking to the pan.
4. Slice pieces of ham in half and place in muffin pan - I like to make an x pattern with the so they cover the majority of the bottom of the muffin tin.
5. Add about a tables of diced tomatoes on top of the ham.
6. After onion and jalapeños are cooked, add about a tablespoon on top of the tomatoes.
7. Mix eggs and egg whites together with a whisk (add some salt and pepper to the egg mixture before whisking if you’d like).
8. Poor egg mixture into muffin tins until they egg almost comes to the top of the muffin tin.
9. Sprinkle egg muffin with approximately 10 grams of cheese.
10. Cook at 375F for approximately 30 minutes.

Macros per egg bits
118 calories
14 grams protein
2 grams carbs
6 grams fat

from my beautiful lifestyle client @ who I’m SO proud of for how far she has come ❤️

Brooke came to be back in early February looking to make a change in her health. So that’s what we did! We’ve done nothing extreme to get to where we have so far (nor will we!). Instead my focus with lifestyle clients are to make positive changes that they will be able to sustain for the rest of their lives. To teach them how to eat and not tell them what to eat.

✔️Home workouts 4x a week
✔️Minimal cardio
✔️Daily step goal
✔️Flexible nutrition approach eating plenty of food (no starving)
✔️Weekly check-ins for accountability

Photos on the left are from February 13th and weight is 152 lbs (when we started)

Photos on the right are from October 24th and weight is 150 lbs

We are still working away so this isn’t the end of her progress 🙌🏻

Brooke’s progress is also a perfect example as to why the scale really doesn’t matter with only 2 lbs difference. The visual changed speak for themselves!

An amazing transformation by my beautiful client 😍

On the right, is just before we started in March to now on the left! Just look at that change in shape!!! Lats growing, waist getting smaller and glutes growing! Definitely less body fat! But here is the part you probably won’t believe… her weight is nearly the same in both photos 🤯 I know it’s surprising to most but I am not actually surprised at all. It just goes to show you the number on the scale is NOT the holy grail of determining progress 🙅🏼‍♀️ Yes I have my clients check their weight weekly but honestly it is one of the very last things I am looking at when it comes to progress and this is a perfect example as to why!

What are we doing?

✅Weight training 5x a week
✅Minimal cardio (only 15 min a few times a week!)
✅Zero food restrictions but eating for our goals
