TIME TO RESTOCK?
Have you checked the best by date on your spices lately?
In case you don't already know, there is a stamped date on the bottom of every Spice Fusion jar (unless it's fallen off, which does happen occasionally). This date is 12 months from the day I grind the spice blend and seven months from when I grind and pack my dukkah.
If you want to extend the life of dukkah, in particular, keep the jar in the refrigerator, or even the freezer if you know you won't be using it for a while.
Store your spices in a dark cupboard and make sure the lid is on properly as any moisture, heat or sunlight will have an adverse effect.
Of course, spices never "go off," they just lose their potency. Freshness is very important to me, because I know how much more flavoursome my blends are immediately after they've been ground. That doesn't mean you should throw the jars out when they pass the best by date. Just smell the spices and if they smell good, they will taste good! If they smell stale and a bit like sawdust, it is definitely time to empty them straight into a bin and order some more!
