The truth seems to be contrary to popular belief a lot these days and this popular belief is no different.

It's okay to take a break during the week from working out to focus on other important things in life!

Besides, most of us don't need to be working out a ton of hours every day. 3 to 4 workouts a week is more than enough to help you see a positive and HEALTHY change in your body!

🍅Besides being super delicious, this recipe is a winner because it’s company-worthy ...

🍳And it takes just a couple minutes to throw together … and uses just one pan!

👉 Quick Tip: I recommend a nonstick skillet for this dish.

Baked Eggs & Greens in Tomato Sauce
(makes 4 servings)

1 Tbsp olive oil
2 10-ounce (283 g) packages frozen chopped spinach, thawed, drained, and squeezed dry
¼ tsp salt, divided
2-3 dashes ground pepper
2 cups (500 g) of your favorite marinara sauce
4 large pastured eggs
Optional: 2 cups (280 grams) cooked brown rice or quinoa, to serve over

Preheat your oven to 350ºF/175ºC.

Heat oil in a nonstick ovenproof skillet over medium heat. Add the spinach and season salt and pepper. Sauté for 2-3 minutes. Stir in the marinara sauce and bring to a simmer.

Make 4 “wells” in the marinara sauce using a spoon, and crack an egg into each well. (Pro tip: crack the egg into a small bowl and then pour into the well, to avoid getting any shell in the sauce).

Place the skillet in the oven and bake for about 20 minutes, until the egg whites are set but the yolks are still soft.

💡Serve with quinoa or rice for a full meal.

🎃😋This recipe is for all the pumpkin spice fans out there!

These walnuts make a great topping for yogurt, sprinkled over a smoothie bowl, or as a quick snack with a piece of fruit.

💡Note: you can swap the coconut oil for grass-fed butter or 1 egg white as the “glue” that makes the mixture stick to the nuts.

Pumpkin-Spiced Walnuts
(makes about 16 servings)

​​1 Tbsp coconut oil, melted
1 Tbsp water
1 tbsp coconut sugar
½ tsp kosher salt
½ tsp (to taste) pumpkin pie spice
¼ tsp (to taste) cinnamon
Pinch of cayenne pepper
2 cups (450 grams) raw (unroasted) walnut halves

Preheat your oven to 275ºF/135ºC. Line a baking sheet with parchment paper.

In a large bowl, whisk together all the ingredients except the Walnuts. Add in the walnuts and stir to coat evenly.

Spread in a single layer on the prepared pan. Place in the oven and bake for 30 minutes. Rotate the pan and cook for another 20-30 minutes. The nuts are done when they are dry to the touch and a little crispy.

💫Let them finish cooling on the pan before removing. These nuts will keep in a covered container for about a week at room temperature (if they last that long!)
