🍂 Homemade granola, no junk, just nutritious and delicious.
Granola is one of those grocery items that is tricky. Advertised as “healthy” “fiber rich” “protein packed”, often there is a ton of added sugar, hidden additives, refined oils and can be pricey.
It’s so easy to make healthy and nutritious granola at-home and here is my favorite way to make it!
Ingredients-(I used all organic & GF ingredients but that’s up to you, the baker!)
▢ Large Baking pan + Parchment Paper
▢ 2 cups GF Rolled Oats
▢ 1/4 cup Unsweetened Shredded Coconut
▢ 1/4 cup Chopped Pecans
▢ 2 tablespoon Pure Maple Syrup
▢ 1/2 teaspoon Ground Cinnamon
▢ 3 tablespoon Unrefined Coconut Oil (Melted)
▢ 1/4 tsp Vanilla Extract
▢ Pinch of Himayalan Salt
▢ Organic Craisins
▢ 1/4 Cup Slivered Almonds
▢ 2 TBSP H**p seeds (optional)
BAKE: 300 degrees 15-17 minutes
1. Combine oats, chopped pecans, cinnamon, salt and shredded coconut in a bowl.
2. In a separate bowl, melt the coconut oil and mix this, vanilla extract and maple syrup into the dry ingredients.
3. Stir together until fully combined.
4. Place a piece of parchment paper on a baking sheet and spread the granola evenly across the surface.
5. Bake in the oven on the middle rack for 7 minutes, stir, spread evenly, bake for another 7 minutes and stir&spread once more. Place granola back in the oven for another 2-3 minutes, the oats are done when they are lightly golden brown. **this last bake will vary per oven, watch and do not over bake!** **coconut will brown faster than oats this is ok**
6. Once fully baked, take out of the oven and on the baking sheet mix in the almonds, h**p seeds and Craisins.
7. Let the granola fully cool before placing it in an airtight container for storage, and sneaking a few pinches to enjoy while it sits 😉
*Store in airtight container for 2 months but it won’t last that long!
