White Bean Chicken and Sun-Dried Tomato Stew. Ingredients: 3 lbs chicken breast, 16 oz Chinese vegetables, 16 oz sun-dried tomatoes, 16 oz diced tomatoes and chilies, 2 16-oz cans white beans, 16 oz mushrooms, 22 oz chicken broth. Cooking Instructions: Cook in the Insta Pot on medium for four hours. I highly recommend this recipe.

Fast Food is a part of American culture. But that doesn’t mean it has to be unhealthy, and that we can’t make better choices. Did you know that McDonald’s used to use beef tallow to make their fries from 1940 until phasing it out in favor of seed oils in 1990? This switch was made because saturated animal fats were thought to be unhealthy, but we have since discovered that seed oils are one of the driving causes of the obesity epidemic. Interestingly enough, this began to drastically rise around the same time fast food restaurants switched from beef tallow to seed oils in their fryers.

People who enjoy a burger with fries on a night out aren’t to blame, and Americans should have every right to eat out at a restaurant without being unknowingly poisoned by heavily subsidized seed oils. It’s time to Make Frying Oil Tallow Again 🇺🇸🍔

Chicken Taco Tortilla Bowls

450 calories, 52g Protein per serve

Ingredients:

2 low carb, high protein wraps
300g diced chicken breast
2 tsp taco seasoning
2 cups chopped romaine lettuce
1 small tomato
4 tbsp drained corn
4 tbsp drained black beans
50ml salsa
2 tbsp light sour cream
Coriander
Fresh lime wedge
Method

Preheat the oven to 180 degrees celsius
Lightly spray 2 oven-proof bowls with olive oil and carefully place the wraps inside to form a bowl shape. Cook in the oven for 12-15 minutes or until brown and cripsy
Meanwhile, cook the chicken in a pan with the taco spices
Remove the tortilla bowls from the oven and fill with lettuce, corn, black beans, tomato, chicken, pipe the sour cream (optional) and dollop with salsa and coriander
Crack the sides and enjoy like nachos!

Pastalaya (Jambalaya Pasta) 🍜🍝

Ingredients:

1/2 lb chicken thighs, cut into 1-inch pieces
1/2 lb shrimp, tail off
1/2 lb andouille sausage, cut into 1/2 inch pieces
2 tbsp cajun seasoning
1 tsp garlic powder
1/2 tsp pepper
2 garlic cloves, minced
1/2 cup yellow bell pepper, diced
1/2 cup red bell pepper, diced
1/2 cup green bell pepper, diced
1/2 cup onion, chopped
10 oz rigatoni pasta, cooked
1 cup chicken broth
1 tsp tomato paste
1/2 cup heavy whipping cream
1/3 cup tomatoes, chopped
3 tbsp vegetable oil

Instructions:
Season the chicken, shrimp, and sausage with cajun seasoning, garlic powder, and pepper.

Heat 1 tablespoon of vegetable oil in a large pan over medium-high heat. Add the chicken and cook until fully cooked through. Remove the chicken from the pan and set aside.

In the same pan, add another tablespoon of oil and cook the sausage for about 1 minute. Then add the shrimp and cook until the shrimp turns pink and forms a "C" shape. Remove the shrimp and sausage from the pan and set aside.

Add the remaining tablespoon of oil to the pan and sauté the yellow, red, and green bell peppers along with the onions until they start to soften.

Stir in the chopped tomatoes and cook for 2-3 minutes. Then add the minced garlic and tomato paste, cooking until fragrant.

Pour in the chicken broth and reduce the heat to medium. Let it simmer for a few minutes.

Add the cooked rigatoni pasta to the pan, followed by the heavy whipping cream. Stir everything together.

Return the cooked chicken, shrimp, and sausage to the pan, mixing well to combine. Cook for another 2-3 minutes until everything is heated through.

Garnish with parsley, serve, and enjoy!😋❤️

**PEPPER STEAK IN A CROCK POT Ingredients 2 pounds beef sirloin, cut into 2 inch strips ¾ teaspoon garlic powder, or to taste 3 tablespoons olive oil 1 cube beef bouillon ¼ cup hot water 1 tablespoon cornstarch ½ cup chopped onion 2 large green bell peppers, roughly chopped 1 (14.5 ounce) can fire roasted tomatoes w/ chilies and haberneros with liquid 3 tablespoons low sodium soy sauce 1 teaspoon salt Directions Sprinkle beef sirloin strips with garlic powder. Heat olive oil in a large skillet over medium heat and sear beef strips, about 5 minutes per side. Transfer to a slow cooker. Mix bouillon cube with hot water in a separate container until dissolved, then mix in cornstarch until dissolved. Pour into the slow cooker with beef strips.
