Figs are coming into season and are oh so good! Our tree was overloaded the last few weeks so I’ve been using them as many ways as I can. This was a favorite. Grilled figs on arugula topped with goat cheese and pistachios, drizzled with a simple EVOO/balsamic vinaigrette. Figs + goat cheese are the best❤️
Figs are mentioned in the Bible as a sign of peace and prosperity✌🏻 High in soluble fiber as well as natural sugar, one fig has anywhere from 3 to 9 grams of sugar - BUT the beauty of the fiber is it helps slow down the uptake of the sugar into your body so sugar crashes are less likely and you are more satisfied so you don’t overeat. Figs are filled with nutrients like magnesium, manganese, calcium, copper and potassium, vitamins K and B6. A 1/2 cup of dried figs has the same amount of calcium as a 1/2 cup of milk.

A baby sweet potato toast topped with a little hazelnut butter and CocoDate Spread👌🏻 I had to bribe myself this morning to get my workout in with this😉 This date and cacao spread is made with only three natural ingredients, and contains no added sugar only sugar from dates👏🏻 There’s no better way to show yourself some than by ditching j***y processed white sugar and swapping it out for sugars.

A snap shot of any given day in my life...not a perfect picture, me (trying hard not to - but usually) telling my family what to do + how to do it, my husband on his toes trying to keep up with our boys, the boys rolling their eyes at us and laughing then asking what’s for dinner😂...So totally imperfect and wonderful❤️ Thankful to be the mom of these three. Sundays are good days for pancakes and gratitude🙏🏻 I think it’s a proven fact that pancakes every so often can make you happier 😉 - and so can developing a more gratitude-minded lifestyle. In positive psychology research, gratitude is strongly associated with greater happiness....Helping us feel more positive emotions, relish good experiences, improve our health, deal with adversity and build strong relationships.
Ways to cultivate gratitude:
-write a thank you note
-thank someone mentally
-keep a
-count your blessings✨
-pray
-meditate on what you’re grateful for
Incorporating a daily gratitude practice has been life changing for me. It’s helped to center me, reduce stress, sleep better, enjoy the present.

Boost your metabolism with red pepper flakes🌶 My fave is adding a sprinkle to scrambled eggs. The active component in hot peppers is and not only does it get the metabolism going, it is , reduces appetite, boosts circulation and digestion. It’s a natural for weight loss and good health. Can be problematic for those dealing with acid reflux, plus peppers are a nightshade for anyone trying to avoid those.
Another tip - eat all the veggies, especially those that are high fiber like asparagus. Fiber keeps you full longer, plus feeds healthy gut bacteria that we need for so many functions of the body, healthy weight being just one of those. Balanced, healthy gut bacteria is crucial for a healthy immune system. And if there’s anything we learned from last year - a healthy immune system is 🔑

If you like dense, seed-filled, satisfying breads that are healthy - this bread is for you👈🏻 EASY to make fermented gluten free/grain free bread. You just need a few ingredients and a little time. You don’t need yeast, sugar, flour or eggs 👏🏻 only buckwheat groats, other seeds of your choice, sea salt and water. 💯

This is a great weekend bread as you start by soaking the seeds overnight, then process in a food processor, and let sit out for 24-48 hours before baking. I started a batch last Friday, baked on Sunday and have been enjoying it all week.

✳️Buckwheat is a seed with a unique amino acid composition. It can help lower cholesterol and reduce hypertension. It also improves digestion and relieves constipation due to its high fiber content. Buckwheat is packed with nutrients and antioxidants, and is decent source of plant based protein.

✳️Since this bread is “wildly fermented,” the seeds are naturally broken down, making them easier to digest and the nutrients easier for your body to access. Fermenting the buckwheat also imparts super powers⚡️turning the seeds into a valuable, accessible prebiotic that nourishes healthy gut bacteria.

Cauliflower Rice Vegetable Pilaf❣️Quick/easy, healthy, veggie-loaded. Delicious with any kind of grilled protein. Add even more veggies to this if you like or use veggies you have on hand.
❤️
2 bags riced cauliflower
spray avo oil
EVOO
1 diced onion
1/2 - 1 diced red bell pepper
1/2 cup sliced mushrooms
1/2 bag (5 oz) frozen chopped spinach
sea salt
black pepper
1 tsp dried oregano
2-3 cloves chopped garlic
1/4 cup white wine

Now get ready to move bc you’re prepping the veggies while the cauli rice cooks - and you don’t want to overcook it😬
1) spray large rimmed baking sheet with avo oil or cover with parchment
2) add 2 bags riced cauliflower to baking sheet
3) pop in 350 degree oven
4) dice 1 onion
5) add approx. 2T EVOO to large skillet
6) sauté onion over medium heat, stir as needed
7) while onion sautés, slice approx 1/2 cup mushrooms (or more), add to the onions
😎 then dice 1/2 or 1 whole red bell pepper, add to the onions/mushrooms
9) dust veggies with approx 1/2tsp sea salt, keep stirring veggies
10) after onions and 🍄 soften, add 1/2 bag frozen spinach, stir until cooked
11) add 2-3 cloves chopped garlic, 1tsp dry oregano, black pepper, stir
12) take riced cauliflower out of the oven, add to veggie mixture, stir
13) give mixture a big glug of white wine (maybe 1/4c), cook until wine evaporates some
14) taste and season with more salt/pepper and more EVOO if needed
