Hey there! :) I'm Amy, a National Academy of Sports Medicine (NASM) certified personal trainer and Corrective Exercise Specialist. I am a spunky and fun loving person that loves to spread/teach the word of health and fitness in anyway I can. I am currently training for my second half marathon (in a few weeks!) but I love to lift heavy weights. I also played volleyball at the college level for all

4 years! I can help you with any health and fitness related goal you may have- weight loss, building muscle, becoming a runner or a better runner, getting back into shape, balance, agility, you name it! I can make a plan for anyone at any age or ability (I have worked with clients as old as 89 years old!)

The first step is to message me and set up a consult where we will discuss your goals, lifestyle, diet, medical history, take measurements, and do some brief fitness and postural tests. These tests help me to analyze any muscle imbalances or troubled areas you may have (and may not even know about!) After this, each workout is different and fun (designed for you!) to prevent plateau and boredom! Check with me on pricing. Chic’n broccoli Alfredo, yes please! The sauce is half a head of cauliflower and frozen butternut squash steamed in almond milk with salt/pep, garlic and onion powder until soft, then blended with raw cashews, lemon juice, and nutritional yeast 🤤and I decided to bake my broccoli with more nutritional yeast and let it crisp up. I also added some nuggets which are made with jackfruit instead of a bunch of processed ingredients.

Tofu bowls 2️⃣ways! Swipe to see them both. First pic is a tofu poke bowl with spicy dressing and second was tofu and roasted veggie sheet pan dinner with Asian dressing.

We love our tofu Banh Mi marinade so I used that for BOTH of these dinners. Drain and press your tofu, cube to desired size.
Marinade:
-1/2 block tofu
-1Tbsp oil
-2Tbsp soy sauce or tamari
-1 tsp each: grated ginger and garlic
-juice of half a lime
-some lime zest
-decent amount of cracked black pepper.
Marinate as long as you can then bake for about 24 mins at 400, flipping each piece to a different side half way.

For the poke bowl I used basmati rice (it’s preferred by the picky eaters in my house), avocado, cucumber, grated carrot, shredded cabbage, scallions, sesame seeds.
The spicy dressing:
-2Tbsp vegan mayo
-1Tbsp tahini
-juice of half a lemon
-sriracha to preference (1tsp maybe?)
-a few drops sesame oil
-water to thin

For the sheet pan dinner I chopped up sweet potato, broccoli, carrots, onions (in big chunks so it wouldn’t burn) and drizzled all with oil, salt/pep, garlic powder. For the broccoli I also added nutritional yeast. Then I baked at 400 for maybe 20 mins or so, flipping everything half way. I cooked the tofu right on the pan too! Makes dinner super easy.
Eat all together with Asian dressing:

Zuccheroni (zucchini pepperoni for hubs) pizza on the grill. Swipe for recipe. I go a little lighter on the fennel and the oil. Bake them for about 20 mins flipping half way on 350. Want them to be more like chips or atleast crispy so they don’t sog up your pizza. If you’ll be baking your pizza you should bake them slightly less because they’ll bake more with the pizza. We grilled ours so it’s pretty quick and they don’t cook much more on the pizza.
