I haven’t posted a recipe in a LONG time but got so many questions about this colorful salad I posted to my story the other day, so here’s the recipe! ENJOY and happy clean eating🤗
Colorful Quinoa & Purple Potato Salad
Ingredients (all ingredients are organic):
2 cups chicken bone broth (I use Butcher’s brand)
1 cup white quinoa
Nutmeg
Black pepper
Himalayan sea salt
Red pepper flakes
Shredded carrots
Red cabbage
Baby kale
Baby spinach
Romaine
Fresh cilantro
Green onion
H**p seeds
Purple sweet potatoes
Fresh squeezed lemon juice
Extra virgin olive oil
Instructions:
1. Add bone broth to a deep skillet and start to heat on high. Rinse quinoa in a strainer, then add to skillet. Add seasonings to your liking and don’t skip the nutmeg, trust me. Bring to a rolling boil and stir every so often, continue to reduce the heat until most of the liquid is absorbed. Then remove from heat and set to the side.
2. You can start this step while the quinoa is cooking, just don’t forget to stir and keep an eye on it! Dice purple sweet potatoes and add to a bowl. Drizzle with olive oil and season to your liking! I use sea salt, pepper, red pepper, tumeric, and cumin. Bake at 450 degrees (I use an air fryer) for about 10-15 mins.
3. Combine all the salad ingredients and drizzle with a little olive oil and fresh squeezed lemon juice. I buy all of these ingredients separately and keep them on hand in the fridge for making different variations of salads throughout the week. Slice everything up in the bowl and this will mix in the salad dressing. Then add your quinoa and sweet potatoes to the side or mix them in! And enjoy this nutrient-dense and so deliciously satisfying salad! 👩🏼🍳 🥗
