Chickpea “Egg” Salad Wraps
Serves 4
Ingredients:
• 1 (15 oz) can chickpeas, drained and rinsed
• 1 ripe avocado, peeled and cubed
• ¼ cup fresh cilantro, chopped
• 2 Tbsp chives, chopped
• Juice of 1 lime
• Sea salt and pepper to taste
• 4 lettuce wraps or tortillas
• Lettuce or spinach (if using tortillas)
• Optional: olive oil mayonnaise
Directions:
Place the chickpeas in a bowl and mash with a fork or potato masher. Add the avocado and continue mashing until combined. Stir in the cilantro, chives, lime juice, salt, and pepper. Divide evenly among the wraps, add lettuce or spinach if desired, roll up, and enjoy.
