🚨Challenge results are in!

I had 4 ladies join my free 8 week weight loss challenge that started on February 3rd and ended today March 31st. They were given a choice to choose a workout plan of mine or do it on their own.

Top 3 would receive a prize from me for their achievements! 4th place will receive something as well because I am SO proud of you all. No names or any personal info will be shared for privacy purposes. Please take a moment to read and congratulate these challengers!

🏆1st place- This challenger started the carnivore diet on day one (Feb. 3rd) of this challenge. They walked 2-3 miles a day on the treadmill. Plus working 40 hours a week on their feet, non stop moving. They added in strength training on week 5 of the challenge. This challenger is down 26.7lbs!!! AMAZING work!

🥈2nd place- This challenger uses a nutrition app to log their daily food intake. It helps see what they are consuming and it helps hold them accountable. They went to the gym around 4 times a week, walked, workouts at home and danced whenever they could to keep active. This challenger is down 12.8lbs!!! AMAZING work!

🥉3rd place- This challenger focused on nutrition for this challenge. They have struggled sticking to any diet plan and gave intermittent fasting a try. They surprised themselves by sticking to the plan and are excited to start adding in walking to their daily routine. This challenger is down 12.2lbs!!!

🏅4th place- This challenger has struggled to stick to a workout plan in the past. They want to be disciplined and are determined to continue to fight to lose more weight. They started off walking and slowly added in strength training. They wanted me to add they are older than most who are starting a weight loss journey but they have always wanted to do this and they are happy they finally started. This challenger is 11.3lbs down!!! AMAZING work!

•If you haven’t tried making this homemade I suggest you give it a try. Very easy to make. We like the Lipton kind but they have 25g of added sugars in them. I only added fresh lemon juice but next batch I’m going to add fresh lime and orange juice.

Honey Chipotle Chicken Rice Bowl

Ingredients:

2 chicken breasts, diced
1/4 cup honey
2 tbsp chipotle peppers in adobo sauce, minced
2 tbsp olive oil
3 cups cooked rice (white, brown, or jasmine)
1 red bell pepper, diced
1 cup corn kernels (fresh, frozen, or canned)
1 cup black beans, rinsed and drained
1 avocado, diced
1/4 cup fresh cilantro, chopped
Juice of 1 lime
Salt and pepper to taste

Directions:

Heat 1 tbsp olive oil in a skillet over medium heat. Add diced chicken, season with salt and pepper, and cook until browned and fully cooked, about 6-8 minutes. Remove and set aside.

In the same skillet, add the remaining olive oil, honey, and chipotle peppers. Stir well and let it simmer for 2-3 minutes until slightly thickened.

Return the cooked chicken to the skillet and toss in the honey chipotle sauce until fully coated. Cook for an additional 2 minutes to allow the flavors to meld.

Assemble the rice bowls by dividing the cooked rice among four bowls. Top with chicken, bell peppers, corn, black beans, avocado, and fresh cilantro.

Squeeze lime juice over each bowl and serve immediately.

Chicken Burrito Casserole

Ingredients:

1/2 cup finely diced onion
1 red bell pepper diced
1 cup uncooked parboiled long-grain brown rice (can also use long grain white rice)
3 tablespoons fajita seasoning (homemade or store-bought)
1/8 teaspoon cayenne pepper (optional)
1 cup corn kernels frozen
1 14 ounce can low sodium black beans drained and rinsed
5 cups shredded chicken
3 cups reduced sodium chicken broth
1 4 ounce can mild green chilies
1 tablespoon olive oil
2 tablespoons tomato paste
1 1/4 cups shredded Monterey Jack cheese

Instructions:

Preheat oven to 400°F. Add onion, bell pepper, uncooked rice, fajita seasoning and cayenne (if using) to a 9×13 inch baking dish and stir to combine

In a separate bowl or measuring cup, whisk together the chicken broth, green chiles, tomato paste and olive oil until well combined.

Add the broth mixture to the baking dish and stir to combine with the rice mixture.
Add shredded chicken, black beans and corn to the baking dish. Give it an additional stir until well combined.

Cover the baking dish with aluminium foil and then transfer to the oven to bake for 65-70 minutes or until all of the liquid is absorbed.
Once complete, remove the baking dish from the oven, remove the aluminium foil, and sprinkle evenly with grated cheese.

Return the baking dish to the oven for a final 5-10 minutes until the cheese has melted and is slightly golden.
Remove from the oven, allow to cool for 5-10 minutes, and serve with a sprinkle of fresh cilantro, green onion, salsa and avocado, if desired.
