Happy Monday from St. Croix Outdoors!

We are excited for another great week ahead.

Fishing conditions are looking favorable across much of Wisconsin this week. Temperatures are expected to warm into the upper 70s and low 80s with generally comfortable conditions for getting out on the water.

Early mornings and evenings should provide the best fishing opportunities as fish remain active during the cooler parts of the day. Walleyes continue to hold along w**d edges and structure, while bass fishing remains strong around shoreline cover. Panfish action has also been consistent as water temperatures continue to rise.

A few chances for rain later in the week could help stimulate fish activity, making it a great time to get out and enjoy the outdoors.

St. Croix Outdoors Catch & Cook Fish Fry

Perfect for fresh walleye, crappie, perch, bluegill, or northern pike straight from the water.

Ingredients

* 2 lbs fresh fish fillets
* 1 cup all-purpose flour
* ½ cup cornstarch
* 1 tsp baking powder
* 1 tsp garlic powder
* 1 tsp paprika
* 1 tsp seasoned salt
* ½ tsp black pepper
* 12 oz cold beer (lager or pilsner works best)
* Oil for frying

Directions

1. Pat fish dry and lightly season with salt and pepper.
2. In a bowl, whisk flour, cornstarch, baking powder, garlic powder, paprika, seasoned salt, and pepper together.
3. Slowly whisk in the cold beer until the batter resembles pancake batter.
4. Let batter rest 5-10 minutes.
5. Heat oil to 375°F.
6. Dip fillets into batter and allow excess to drip off.
7. Fry 3-5 minutes until golden brown and flaky.
8. Place on a wire rack and lightly season with additional salt while hot. Using cold beer, flour, baking powder, and seasonings helps create a light, crispy coating.

Homemade Tartar Sauce

* 1 cup mayo
* 2 tbsp sweet relish
* 1 tbsp lemon juice
* 1 tsp Dijon mustard
* 1 tsp chopped dill
* Salt & pepper to taste

Mix and refrigerate 30 minutes before serving.

Serve With

* Fresh-cut fries
* Coleslaw
* Lemon wedges
* Malt vinegar
