What's for dinner? How about some smoked meatloaf.

Typical meatloaf:

2lbs ground beef
1/4lb of sausage
2 eggs
1 cup milk
1 cup breadcrumbs or saltine crackers
Season to taste
Smoke at 225°F (use super smoke if you have it) until IT is 160°F
20 minutes before finished mix 1 cup BBQ sauce of choice with 1/2 cup of apple juice and glaze.

Made some smoked salsa this morning.

Salsa time:

"Medium" -
2 - Jalapeños
1 - Anaheim
1 - Serrano
4 - Habaneros
1.5lbs steak tomato
5 - garlic cloves
1/4 cup red onion
Juice of 2 limes
1 cup cilantro
Salt to taste

"Hot" -
2 - Jalapeños
1 - Anaheim
1 - Serrano
1.5lbs steak tomato
5 - garlic cloves
1/4 cup red onion
Juice of 2 limes
1 cup cilantro
Salt to taste

Smoked @ 180°F for 3hrs
Smoke with equal parts of pecan, cherry, and apple pellets
