The only pumpkin cookie recipe you need. Yep, I said it.

Pumpkin Snickerdoodles
•preheat oven to 350
• mix together 1 C butter, 1/2 C brown sugar, 1 C white sugar, 2 tsp vanilla, 12 Tb pumpkin purée.
•Add 3 C flour, 1/2 tsp salt, 1/2 tsp baking soda, 1/2 tsp baking powder, 3 tsp cinnamon, 2 tsp pumpkin spice, and 1 C white chocolate chips.
•Chill 30 minutes.
•Roll into small balls, and dip in cinnamon sugar (1/2 C sugar, 1 tsp cinnamon), slightly flatten.
•Bake 8-10 minutes.

I’ve got some new friends around here so let me introduce myself real quick.

I’m a married mom of 4 (11, 8, 4, 1). Oh, also 2 big dogs, a cat, and a gecko 🤪 Life is busy and we try to fit in a lot of fun!

Originally from Utah, now living in Colorado.

Started off my career as a junior high health & dance teacher at Hillcrest Jr in Murray, UT.

After moving to CO I got certified as a personal trainer & group fitness instructor. Best decision!

Currently teach barre, High fitness, and Bootcamp. Love them all!

Some of my favorite things are vacations, visiting Utah, baths, Diet Coke, shopping, murder mysteries, and date nights.

Thanks for joining me here! I try to post workouts you can do at home & the gym, and family friendly recipes. We all want a long healthy, happy life so small steps in the right direction is where its at!

It’s been a minute since I’ve posted a recipe, but I came back with a winner. I used to love crockpot bbq chicken sandwiches for an easy dinner, but this spiced honey chicken sandwich just took that spot!

Spiced Honey Chicken Sandwich
•In a slow Cooker place 2 lb chicken breasts, 1 Tb vegetable oil, 1/2-1 tsp red pepper flakes, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp paprika, salt and pepper. Cook on low 6 hours.
•Shred chicken (keeping the cooking juices), add 1/4 C honey, 2 tsp apple cider vinegar, and 1 tsp red pepper flakes. Mix well.
• Coleslaw: Mix 2 C sliced cabbage or coleslaw mix with 1/4 C Mayo, 1 Tb lemon juice.
• Toast a hamburger bun (don’t skip!) add your chicken mixture and top with coleslaw.

Summer can be a hard time to get a meal on the table. We’re always running around enjoying the sun. This dinner was done in 20 minutes and everyone gobbled it up!

Ground Beef Ramen
•Brown 1 lb ground beef and 1 chopped onion. Remove from pan and set aside.
•In the same pan add 1 Tb olive oil and 1 package frozen stir fry vegetables. Cook through.
•Add beef back into the pan with the vegetables. Mix in: 1/4 C soy sauce, 1 Tb brown sugar, 1 Tb apple cider vinegar, 1 tsp ginger, 2 tsp sriracha.
•meanwhile, boil 2 packages ramen (without seasoning) in 1 1/2 C water.
•combine beef mixture and ramen (I drained a little water out). Top with fresh green onions and sesame seeds.

Obsessed with this salad. It screams summer! It’s very simple to make (🙌🏻) My kids won’t eat salad but it’s super easy to deconstruct for them.

Balsamic Steak Salad (serves 2)
•Steak: marinade 2 top sirloin steaks in 2 Tb balsamic vinegar, 1 Tb Worcestershire, 1/4 C olive oil, 1 tsp Dijon, salt and pepper. Marinade for about 30 minutes. Grill until cooked to your liking.
•Salad Assembly:
1 head Chopped romaine
1 C corn (fresh off the cob or use cooked frozen corn)
1 C cherry tomatoes halved
1/2 C Gorgonzola cheese crumbles
• Dressing: 1 Tb lemon zest, half lemon juiced, 3 Tb balsamic vinegar, 1/2 C olive oil, 1 tsp Dijon.

You have spoken, the pesto Burrata won the poll. Here is the recipe for this divine dish.

Pesto & Roasted Tomato Burrata
•Slice 2 cups cherry tomatoes, toss with 1 Tb olive oil, salt and pepper. Place on baking sheet, roast at 425 for 18-20 minutes.
• remove 8 Oz Burrata and dry with a paper towel (it can be hard to find, fresh mozzarella is a good substitute). Slice and place on serving dish.
• drizzle Burrata with about 3 Tb pesto, and the roasted tomatoes. Season with salt and pepper.
• serve with crostini (sliced baguette brushed with olive oil, salt and pepper. Bake oil side up at 425 for 10 minutes)
