ROASTED PEPPER SHRIMP AND QUINOA✨an easy and nourishing recipe that is packed with protein and is quick to throw together on busy weeknights! I also love recipes like this for meal prep because the flavors continue to meld together and are even better the next day. If you’re like me and you always seem to have a jar of roasted red pepper lingering in your fridge or pantry, this is the recipe for you!
Ingredients:
1 1/2 cups quinoa
3 cups chicken bone broth
1 lb shrimp
1/2 cup roasted red pepper, small diced
2 cups parsley, chopped
4 Persian cucumbers, quartered and diced
Marinade:
1/4 cup olive oil
1/4 cup lemon juice
2 cloves garlic, minced
1 small shallot, diced
1 tsp paprika
1/2 tsp dried oregano
1 tbsp honey
1 tsp salt, divided
1/4 tsp pepper
Directions:
In a small saucepan over high heat bring the quinoa, bone broth, and1/2 teaspoon of salt to a boil
Once boiling, reduce to a simmer, cover, and cook for 20 minutes or until most of the liquid has been absorbed
Keep it covered and let it rest for a few minutes then fluff with a fork
While the quinoa is cooking, make your shrimp marinade by whisking together the olive oil, lemon juice, shallot, garlic, honey, salt and pepper in a glass or bowl
Add your shrimp to a bowl and add the diced roasted red pepper, stirring to coat the shrimp in the marinade, using the remaining 1/2 tsp salt, and let marinate for 10-15 minutes
Heat a large nonstick skillet over medium heat
Pour the shrimp and marinade into the skillet and cook the shrimp in a single layer for 2 minutes, flip and cook for another 2 minutes then remove the skillet from the heat
Once the quinoa and shrimp have cooked, add both so a large bowl, using a slotted spoon to separate the shrimp from the marinade
Add your chopped parsley and cucumbers to the quinoa and shrimp and toss gently to combine
Spoon the heated marinade over the shrimp and quinoa mixture (use as much or as little as you like - I personally use it all!)
Season with more salt and pepper, serve, and ENJOY!
