**RECIPE** CHICKPEA CURRY
Fast & Easy Chickpea Curry
(makes 4 servings)

1 Tbsp avocado or coconut oil
1 medium onion, chopped
1 large bell pepper, chopped
2 large carrots, sliced medium-thin
1 15-oz (425 g) can of chickpeas, drained and rinsed
1 cup (240 ml) curry simmer sauce
½ cup (120 ml) vegetable broth
6 big handfuls of baby spinach
2 cups (380 g) of cooked rice

Heat the oil in a large skillet over medium-high heat. Add the chopped vegetables and cook, cook, stirring often, for about 5 minutes, until they begin to brown.

Add the chickpeas, simmer sauce, and broth. Bring to a simmer, stirring occasionally. Lower the heat to medium-low and continue to simmer until the vegetables are tender, 5-8 minutes. Stir in the spinach in batches and cook until wilted.

Remove from the heat and serve your curry over rice.

**RECIPE**
Zucchini Bread Overnight Oats

Prep Time: 8 hours

Ingredients: (Serves 2)

3/4 cup Oats (Gluten-Free)

3/4 cup Unsweetened Almond Milk

1 tbsp. Ground Flax Seed

1 tbsp. Maple Syrup

1/2 tsp Cinnamon

1 Zucchini (grated- about 1 cup total)

2 tbsps. H**p Seeds

1 Banana (sliced)

Directions: Mix together the oats, almond milk, ground flax seeds, maple syrup, cinnamon, zucchini, and h**p seeds in a large bowl. Cover the bowl, and then put it in the refrigerator overnight.

In the morning, take a cereal bowl and put about half of the overnight oats in the bottom. (save the other half for following day). Add about 2 Tbsp. of additional oats to the bowl, stir. Add 1/2 of a banana, sliced. Sprinkle with cinnamon, and enjoy!

NOTES: Hot or cold - These are great both hot AND cold! Simply put it in the microwave for 30-90 seconds to warm it up.
