(Recipe of the Week) Simple ingredients can create the most extraordinary meals. This light, vibrant cod dish brings together ripe tomatoes, briny capers, olives, and garlic for a burst of freshness with every bite.

Cod with Tomato, Capers and Garlic

Ingredients
2 tomatoes, diced
¼ cup Kalamata olives, pitted and diced
1½ tablespoons capers, with a little juice from jar
1 jalapeno pepper, finely diced (to taste)
2 scallions, chopped
2 cloves garlic, finely minced
1 tablespoon red w**e vinegar
1½ tablespoons extra virgin olive oil, divided
4 4-ounce cod fillets
Sea salt and pepper to taste
¼ cup fresh parsley

Step 1
In a bowl, mix tomatoes, olives, capers, jalapeño, scallion, garlic, vinegar, and ½ tablespoon oil. Tip: Make ahead of time and store in refrigerator for 20 minutes to an hour before using. The flavors increase with time.

Step 2
Season fish with salt and pepper. Heat skillet with 1 tablespoon oil over medium-high heat. Add fish and cook for 3 minutes without touching. Reduce heat to medium. Flip fish over.

Step 3
Add tomato mixture and cook another 3-5 minutes or until fish is done and sauce is heated through. Fish is cooked when it is flaky or it reaches an internal temperature of 140 degrees.

Step 4
Turn heat off and stir in parsley. Serve fish over a bed of greens and spoon extra tomato sauce over greens.

Healthy Chicken Cauliflower Rice Bowls

Ingredients
2 boneless, skinless chicken breasts, cut into bite-sized pieces
4 cups cauliflower rice
1 red bell pepper, diced
1 zucchini, diced
1 cup broccoli florets
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon Italian seasoning
½ teaspoon onion powder
½ teaspoon garlic powder
Salt and black pepper to taste
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley

How to Make It
Season the Chicken
Place the chicken pieces in a bowl and season with smoked paprika, Italian seasoning, onion powder, garlic powder, salt, and black pepper. Toss until every piece is evenly coated.

Cook the Chicken
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 6–8 minutes until golden brown and fully cooked. Transfer the chicken to a plate.

Sauté the Vegetables
In the same skillet, add the remaining olive oil along with the garlic. Cook for about 30 seconds until fragrant. Add the bell pepper, zucchini, and broccoli, then sauté for 5–6 minutes until the vegetables are tender-crisp.

Cook the Cauliflower Rice
Add the cauliflower rice to the skillet and stir everything together. Cook for 4–5 minutes, stirring occasionally, until the cauliflower rice is tender but not mushy.

Combine Everything
Return the cooked chicken to the skillet and drizzle with lemon juice. Toss everything together until well combined and heated through.

Garnish and Serve
