It’s easy to make cheese at home 🧀

Homemade cheese (paneer) is more easily digestible than the cheeses we buy in the store. You get a good source of protein and calcium with no added ingredients ✔️

Ingredients:
🥛Organic Whole Milk
🍋 Lemon or lime juice
💧 Splash of water

How to make it:
• Start by putting just enough water to cover the bottom of your pot (helps to prevent scalding - thank you Divya Alter)
• Pour in however much milk you want and bring the heat up just before it starts to softly boil
• Cut the heat and squeeze some lemon or lime juice into your pot until you start to see the curds separating. If it does not curdle, add a bit more citrus. Also be aware that you may not have gotten the milk hot enough.
• Stir and let sit until cool enough to pour into your cheesecloth lined bowl/pot
• Once you pour the contents into the cheesecloth/bowl let it rest and then squeeze out as much liquid as you want. If you want softer/wetter cheese, squeeze a bit. If you want harder cheese, you can wring it out and then press the cheese to remove excess moisture.
• Refrigerate, eat, and enjoy!

Use in recipes with roasted veggies, rice and spices 😋

**Be sure to save the remaining whey. It can be used in soups/drinks, and it has digestive properties when spiced with cumin and/or ginger. It can be good for skin and hair 🥰

Summer Snack 🍓

Technically we’re still in the spring, or Kapha season. However, we are also in what’s called ritu sandhi (seasonal junction). We are on the cusp of pitta season where it’s much hotter, more humid, and often our emotions follow our environment.

We may get hangry, short tempered, irritable, sharp, etc if we start feeling imbalanced. That’s why it’s important to eat with the seasons and begin to support ourselves through diet and lifestyle changes.

This recipe can be adapted - you could add some other cooling Ayurvedic herbs, different spices, varied quantities of ingredients. Make it however you like it (:

For this recipe, I didn’t measure anything. I just wanted it to be tasty and stick together, so I tasted as I went and added more coconut oil if it needed the moisture.

With the heat and sharpness of the upcoming pitta season, the dates, vanilla, cardamom, coconut oil, and rose all help to internally cool us while supporting digestion.

Hope you try them and enjoy them!
🍓freeze dried strawberries
🍓cardamom
🍓rose buds
🍓oats
🍓dates
🍓cashews
🍓coconut oil
🍓vanilla extract
🍓pink salt

To make them, grind cashews, oats, and strawbs, cardamom, rose, and a pinch of pink salt in a food processor. Remove and set aside. Next blend 5-6 pitted dates + coconut oil + vanilla. Once everything is relatively smooth, you can add the dry ingredients back in and pulse til it all comes together. Roll into balls and enjoy. They aren’t pretty, but they taste great 😋

Yeeee! So excited to offer this again in August! ❤️

Want to do something a little spicy this summer? A little out of your cozy comfort zone perhaps? We do too!

Join us for our Rise + Shine Event on 8/1/26
We are going to hike up Mt. Ski Gull before sunrise. Once at the top, my dear friend Treff is going to guide you through a 30 minute yoga experience while the sun rises behind her. Once yoga is over, we hike back down to the yurt for a fresh and wholesome breakfast made by me!

If you’re ready to do something next level this summer, this just might be it!
