Hook’d N Cook’d 🪝🐟👨🍳 on a rainy cold Memorial Day weekend. Introducing “Tautog Mediterraneo” a meal that takes me back to the coast of Italy.
Baked Blackfish (Tautog) with Cherry Tomatoes, Red Onions, and Capers. This one dish wonder will hook you and keep you coming back for more! Note: you can substitute Tog with Cod, Black Sea Bass, or Scup depending on what you have on hand!
Ingredients:
8 Blackfish Filets
12 oz cherry/grape tomatoes (cut in 1/2)
1/2 cup capers
1 whole red onion
1/4 cup olive oil
1 tsp oregano (I use fresh)
1 tsp parsley (I use fresh)
3 garlic cloves, minced
2 tsp salt
Back pepper, to taste
1/4 cup white wine
Basil leaves, for garnish
1/2 lemon - squeeze to taste at serving
Preparation:
1. Preheat oven to 450 F.
2. Add tomatoes, diced red onion, garlic, oregano, parsley, capers, white wine, olive oil, salt and pepper to a baking dish and mix well; roast for about 20 minutes.
3. Once veggies have softened, season fish with olive oil, salt and pepper and nest them into the roasted veggies.
4. Cook for another 12 minutes until bubbly and enjoy with rice and a green side (ie spinach).
