The Sparkling Hibiscus & Charred Lime Highball 🫧🌺🍋‍🟩

Recipe (makes a pitcher)

Burnt lime simple syrup
•2 limes (to char + juice)
• 4 limes to juice (or lime juice)
• 150g brown sugar

Red Drink
1 cup dried hibiscus tea
2-inch sliced ginger
4 cups boiling water
1 cup Burnt Lime Simple Syrup
Ice
3-4 cups ice-cold club soda or sparkling water
Fresh mint leaves (optional)

Method

1. Make the burnt lime simple syrup
- Roll your 4 raw limes firmly against your cutting board with the palm of your hand before cutting them. This breaks the internal membranes and ensures you get maximum juice extraction on camera.
- Halve and blowtorch the 2 limes (skin-side up) to a nice char.
- Juice the burnt limes and the regular ones till 2/3 cup - alternatively add lime juice till 2/3 cup.
- Add juice to a pot with 150g of brown sugar and the burnt lime skins.
- Bring to the boil and simmer for a few minutes, then strain through a cheesecloth or fine mesh strainer
- Can be stored in the fridge for up to 3 weeks

2. Make the red drink
- Boil 4 cups of water, add 1 cup of hibiscus tea with a 2-inch slice of ginger, and steep for 15 mins. Then strain into a pitcher and cool completely.
- Add 1 cup of your burnt lime simple syrup (if you don’t have a whole cup add honey to make up the difference), and mix well - check for sweetness!
- Add ice to a tall glass, and about 2/3 cup of the red drink. Top with ice cold club soda or sparkling water
- Clap mint leaves between your hands to release aroma, and drop on top. Enjoy!

A trip to Berlin is not complete without going to Berghain! I actually prefer getting up on Sunday morning - that way if you don’t get in it’s not like it ruined your night. We got coffee at the downstairs bar (it’s nice and quiet!) and chatted for a bit before heading to the dance floor. Afterwards you must must get brunch at - the food is absolutely fantastic!

I always wanted to be a mom. But after four miscarriages, the pregnancies that followed were filled with anxiety and fear. I hated being pregnant, and I didn’t trust my body or believe I’d ever get to hold my children in my arms.

At the time, I felt incredibly alone, but I think so many people carry these experiences quietly.

I am forever in awe of these two little humans. I’m the luckiest person alive to be their mom - it’s the greatest love, joy, and honor of my life.
