I have learned to enjoy creating beauty with food. It stated with making cakes years ago. Now charcuterie boards I can get creative to make healthy snacks foods look fun! 😍
Gluten-free, dairy free! And supper yummy!

What are your favorites to use on a charcuterie board?

One of my favorites! Gluten Free chicken tenders. My kids and husband absolutely LOVE these! To feed our family of five we use 3lbs of chicken breasts cut into strips.

Ingredients

3lbs chicken breasts, cut into strips and set aside.

Dump in the following into a big bag. Shack up once all ingredients are in it.

1 block of Violife Parmesan cheese(dairy free) shredded small.
1 TB Oregano
1 tsp Celtic Sea Salt
1 tsp onion powder
1-2 minced garlic gloves

Take your chicken and shake it up into the mixture, place on a baking sheet with parchment paper lined.

Bake at 425° for 40-45 minutes until chicken is cooked through.

I personally love mine on a bed of leafy greens and a little Honey mustard vinaigrette dressing.

Getting up early to get the body moving pays off in more ways than one. I love seeing the wild life out and enjoying the peace before the humans gets noisy. This girl was very calm seeing me on the trail.

What have you done for your healthy lately?

Me?

Enjoying nature on my walks and runs! Also eating more veggies and fruit than what I had been doing. I went from3-4 servings a day to 6 a day. I’m working up to 9 a day.

Why? Because I’m flooding my body with tons of nutrition that it needs! As I get older my body needs more. I can control what I put in now and know that in the future I did everything I could for my health. I’m turning 44 this year and I plan on being active and healthy in my 60’s!

A great meal idea for you this week! I absolutely loved this plate I created! ❤️

It’s simple, extremely tasty and it’s quick and easy to make! I can see using left overs for fish tacos 🌮 but if you enjoyed it as much as my family there won’t be any left to make. 😂

Baked Halibut 🐟 with onion powder, thyme and sea salt.

Lots of mixed greens🥬, heirloom carrots 🥕and a avocado oil, mustard, garlic and maple syrup dressing.

Mango salas: mangos, bell peppers🫑, jalapeños🌶, onion, cilantro and sea salt.

Another great shake that I love to enjoy! Chocolate Mint! Here’s what I have in mine!

4 ice cubes
4oz water(can use almond milk)
1 scoop vanilla bone broth protein powder
2 TBS of the cacao powder
1 cup of spinach
4 mint leaves

Blend up and enjoy! You scant even taste the spinach! This was super yummy this morning!

What did you do for your healthy?

I made a nutritional stocked full shake this morning!

I have the following in my shake:
1/2 small banana
6 Strawberries
6 raspberries
10 blueberries
1 scoop of my favorite vanilla bone broth protein
1 cup baby spinach

Blend it up in your blender and yummy! I’m set for the morning with a nutrient packed breakfast!

Do you know what the best part is?

You can’t even taste the spinach! It only makes the shake green. 🥬😊

What did you do for your healthy today?

I went for a nice easy run this morning. Running had always been a great outlet for me for stress relief. It’s also my time to be with God. I love being out there early in the morning as the world starts to wake up. The animals are just starting there day and you can here the birds sing or catch a fox scurry past your trail. The breeze is cool and the sunrises can be amazing.

This morning I just went out for a run. I time in mind. No watch to track. No care as to how many miles I put in or how fast I ran. It’s an amazing feeling when you go to go.

What does health mean to you today?

For me? Getting my veggies in! I usually aim for 3 cups a day. This week I’m up to about 4-6 a day.

This is a mixture of what I have left just tossed together for a make shift salad with red lentil noodles. Lunch got me 2 cups of veggies in! 💚veg🥗🥦🥒🥕🥬🧅🫑🌶

Farmers markets are absolutely amazing! Let’s start a list of your favorites! I went to the

Appletons farmers market this past weekend and it did not disappoint! I also stopped at Bona Fide for a fruit smoothie! 😋

What are your favs? And where are the weeknight markets? I need some good veggies mid week also.
