These cheesy chicken & black bean quesadillas are packed with protein, easy to make, and perfect for busy nights. Pair with salsa, veggies, or guacamole for a balanced meal the whole family will love.
Ingredients (serves 4):
2 cups cooked shredded chicken
1 cup black beans, drained and rinsed
1 cup shredded cheddar or Mexican blend cheese
4 large whole-wheat tortillas
½ cup corn (optional)
1 tsp taco seasoning
1 tbsp olive oil or butter
Instructions:
In a bowl, mix shredded chicken, black beans, corn, and taco seasoning.
Heat a skillet over medium heat with a little oil or butter.
Place a tortilla in the pan, sprinkle cheese, add the chicken mixture, then top with more cheese and another tortilla.
Cook 3–4 minutes per side until golden and crispy.
Slice into wedges and serve with Greek yogurt (as a sour cream swap), salsa, or guacamole.
