Nicole received her Bachelor’s degree from Adelphi University and later received her Master’s of Teaching degree in Physical Education in 2007. She was certified by the American College of Sports Medicine as a Health Fitness Specialist in 2001. Following graduation, Nicole accepted a position at Physical Solutions as a personal trainer. Nicole works closely with clients to develop personalized hea

lth and fitness plans. She provides clients with advice on nutrition as well as engaging clients about fitness needs, giving them feedback and keeping track of their development. Her career as a physical trainer has enabled her to assist athletes to improve their athletic performance. She has also had the opportunity to work with clients confronting health issues such as obesity and diabetes. Programs for this population include cardiovascular, weight training and nutritional evaluations and guidance. Nicole has coached the Junior Varsity Women’s Lacrosse team at Garden City High School since 2007. As a result of the positive impact that physical activity and fitness has had on her life, Nicole remains passionate about the opportunities that she has as a personal trainer to educate and bring health and fitness into the lives of many. Congratulations to Sophia Karras and Fran Raimondi. I’ve had the privilege of working with these extremely dedicated swimmers for the past year. Our sessions included strength training, flexibility, and injury prevention. All of these components are crucial when training out of the pool.
Sophia has been excepted to Notre Dame University for her extensive achievements in swimming. Furthermore she is heading to Olympic trials for the mile. Go Sophia!
Fran has been excepted to Villanova university for her amazing accomplishments in swimming.
They are both very hard-working athletes who put in 100% each session and push each other to be the best version of themselves.
I have enjoyed training these girls and look forward to following them as they head off to college in the fall.
It’s been an honor to work with athletes that train at such an elite level. As much as I have taught them they have taught me what it’s like to work hard, follow your dreams, and never give up.

Happy New Year!! I’m very excited for this fresh start and renewed focus on nutrition. Here is a low-carb/high protein recipe to try out in the new year. I can’t wait to share some more health tips and see you all for a work out 💪⁣

Lemon chicken edamame spaghetti ⁣

Ingredients⁣

1 box Explore Cuisine Edamame Spaghetti (cooked per instruction)⁣
1 lb. Chicken Breast diced⁣
1 tsp Minced Garlic⁣
1/2 C Sliced Green Pepper (any bell pepper will work)⁣
1 Bunch fresh Spinach (rinsed and drained well)⁣
1/2 Lemon⁣
Olive Oil⁣
Salt & Pepper to taste⁣

Instructions⁣

•Cook Edamame Spaghetti per box instructions.⁣
•Meanwhile saute chicken with S&P in olive oil and set aside.⁣
•Saute sliced bell pepper an garlic in olive oil until garlic browns. Add to chicken-set aside.⁣
•Cook the rinsed and dried spinach down in olive oil-squeeze some lemon into the pan with it. Once cooked down (do not overcook) transfer to a paper towel-lined cookie sheet, cool a moment then press with more paper towels until dry.⁣
•Add all back into the pan and add the cooked spaghetti. Stir to heat through.⁣
Squeeze more lemon juice to taste and top with fresh parmesan cheese.

𝟑 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭 𝐏𝐚𝐥𝐞𝐨 𝐁𝐫𝐞𝐚𝐤𝐟𝐚𝐬𝐭 𝐂𝐨𝐨𝐤𝐢𝐞𝐬 (Vegan, Gluten Free)⁣
An easy, delicious 3 ingredient recipe for paleo breakfast cookies made with almond flour and banana! No eggs and no sugar, these cookies are soft, chewy and loaded with chocolate chips- A delicious quick and easy filling breakfast! Vegan, Gluten Free and Dairy free!⁣

Ingredients:⁣
2 1/2 cups almond flour⁣
4 large overripe bananas, mashed⁣
1/2 cup almond butter can sub for any nut or seed butter of choice⁣
1/2 cup chocolate chips of choice (Optional)⁣

Instructions⁣
1)Preheat the oven to 175C/350F. Line a large tray with parchment paper and set aside.⁣
2)In a large mixing bowl, combine all your ingredients, except for your chocolate chips, and mix very well, until combined. Using a spatula, stir through your chocolate chips. ⁣
3)Using a cookie scoop or slightly wet your hands, form small balls of cookie dough and place on the lined tray. Press each ball into a cookie shape. Bake for 12-15 minutes, or until golden brown on the edges- Do not overcook.⁣
4)Remove from the oven and allow to cool on the pan for 10 minutes, before transferring to a wire rack to cool completely. ⁣

Notes⁣
If your batter is too thin, add a little extra almond flour. 3 Ingredient Paleo Breakfast Cookies (Vegan, Gluten Free) should be kept refrigerated, for up to 5 days. They are freezer friendly and can be kept frozen for up to 2 months.
