Cashew Crunch Salad with Sesame Dressing

For the Salad:

1/2 head of green cabbage, finely shredded
1/2 head of purple cabbage, finely shredded
2 cups carrots, matchstick-cut or shredded
1 cup fresh cilantro, chopped
1/2 cup sliced green onion
2 cups cooked edamame (see FAQs)
1–2 cup roasted cashews (see notes)
2 cups crunchy chow mein noodles (optional)
chicken, shrimp, or any other protein you like
Dressing:

1/4 cup olive oil (you can use any other oil as well)
3 tablespoons white vinegar
2 tablespoons sesame oil – very important for flavor!
2 tablespoons sugar
1 teaspoon salt
a few shakes of garlic powder
optional: 1/4 cup Greek yogurt or mayo (more or less to taste – this changes it from a vinaigrette to more of a creamy dressing)

Chicken:
1 1/2 pounds boneless skinless chicken thighs
1 teaspoon paprika
garlic powder, onion powder, salt, and pepper to taste
olive oil
Lemongrass Sauce:
3 cloves garlic, minced
1 jalapeno, ribs and seeds removed (optional), minced
one 1-inch k**b of ginger, grated or minced
2 tablespoons lemongrass or lemongrass paste
1 tablespoon brown sugar
one 14-ounce can unsweetened coconut cream (similar to coconut milk, but NOT the same as cream of coconut, which is sweetened!)
juice and zest of one lime

Shrimp Boil

1 pound small potatoes (for the best flavor I recommend cutting in half or quarters so the insides of the potato can absorb the sauce)
2–4 ears of corn, cut into small pieces
1 pound kielbasa sausage, sliced
1 pound shrimp
and any random things you have on hand that can make a very low key broth: onion, garlic, lemon, Cajun seasoning, salt
Sauce:

2 sticks of salted butter (you don’t have to use it all! my motto for garlic butter sauce is better too much than not enough)

Spaghetti with Crispy Zucchini

1/2 pound of uncooked spaghetti
one 24-oz. jar of your favorite store-bought spaghetti sauce (I usually use about 2/3rds of a jar)
1 zucchini, cut into 1/4 inch-thick rounds (about 2–3 cups)
1 egg
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese (optional)
1 tablespoon lemon zest (optional)
1 teaspoon salt and pepper to taste
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/2 cup of some kind of cheese – I like shredded mozzarella and provolone, but fresh mozzarella slices are great and goat cheese is also amazing
