As the seasons change, I like to take some time to focus on gratitude. The days are getting shorter so I am grateful for any time I can spend outside. The fresh air provides a much needed reset so that I can hit the ground running (literally) the upcoming week.

This crazy roller coaster of a year has nudged me into trying something completely new. Although it felt a little scary in the beginning to take the full leap into something unknown, I knew I had a great group of people here to support me.

As the months pass and the uncertainty still lingers, our small group has actually grown!

I am so grateful for you!

I am so grateful for the time you take out of your day to sweat with me!

I am so grateful for your kindness and smiling faces (even if they are forced after a hard workout). 😂👍

Thank you for continuing to show up and work hard. We will get through this as long as we keep moving forward. 💪

Decided I wanted something sweet today... these pancakes did not disappoint!! 😍

Blue(berry) Pancakes /// sometimes I just want to keep it simple, and today is one of those days, yknow? No long caption needed, cause these pancakes speak for themselves 🥞☺️

Also let me know what other types of pancakes you’d like to see in the future!

Ingredients:
60g oats (about ¾ cup)
100g frozen blueberries (about ½ cup)
1 large egg
1 large egg white
½ tsp baking powder
¼ tsp cinnamon
1 pinch of salt
1 tbsp maple syrup

Directions:
Blend all your ingredients together. Then use a greased skillet on medium heat to cook pancakes for about 1-2 minutes on each side, they will get slightly brown. Stack ‘em up and serve with your favorite toppings! This makes about 6 pancakes and is a good serving for one hungry person.

Summer is around the corner, I can feel it.
I’ve pulled out my flip flops, shorts and bathing suit in preparation of what looks to be a decent weekend weather wise!!

My favorite sign that summer is back is the return of fresh mangoes in the grocery store!

This salsa goes great with eggs, with slow cooker pulled pork, wrapped up in lettuce leaves the possibilities are endless.

SERVES 16

3 Mangoes, peeled, seeded, and diced

1 cucumber, peeled, seeded, and diced

2 jalapenos peppers, seeded and finely chopped

1 red onion, finely diced

1 clove Garlic, minced

½ cup cilantro, minced

zest and juice from 1 lime

Salt and pepper to taste

DIRECTIONS
1
Combine all of the ingredients in a medium bowl. Chill for a few hours in the fridge before serving.

Hey! My name is Ashley, I am an online personal training coach. I have been working with people who are avid gym goers but have been restricted from going to the gym during the Covid-19 “stay home” order. I help my clients maintain strength and fitness from the comfort of their homes. ⠀

I started off as an in-person group fitness instructor around 4 years ago! During this unprecedented time, I’ve decided to move all of my classes online! People of all fitness levels are welcome to join our daily group classes. For every class there are progressions for a harder workout and modifications to help those who need them. I want everyone who joins to feel successful and have a great workout. ⠀

💡If you’ve been feeling anxious or stressed out over the past few months, joining our exercise group could help!

Exercise increases your overall health and your sense of well-being, which may give you a little more pep in your step.

🍟Happy Fry-day!🍟⠀

Every burger, whether it is a beef, turkey, or plant-based patty, deserves to be accompanied by a delicious side of fries! 🍔⠀

You won’t even notice that these fries are baked and not fried – the flavors are THAT good! By baking at a very high oven temp – 500 degrees F – and by heating up the pan beforehand, these fries get crispy on the outside and tender on the inside, just like a steak fry should be! Make lots and enjoy!⠀

What you'll need: ⠀


3 sweet potatoes⠀
•⠀
3 tablespoons coconut oil, melted⠀
•⠀
1½ teaspoons sea salt⠀
•⠀
2 teaspoons sweet paprika⠀
•⠀
1 teaspoon garlic powder⠀
•⠀
1 teaspoon onion powder⠀

Serves 6 ⠀


DIRECTIONS⠀

1.Preheat the oven to 500 degrees F. Place a nonstick baking sheet in the oven.⠀



2. Peel the sweet potatoes and cut into ½ - ¼ inch wedges. Place in a large bowl.⠀


3. Toss the sweet potatoes with the coconut oil, salt, paprika, garlic powder and onion powder. Mix until evenly coated.⠀


4. Carefully remove the baking sheet from the oven, and arrange the sweet potato wedges in an even layer. Return to the oven for 8 minutes, remove and flip all of the fries. Bake for an additional 6-10 minutes, until tender on the inside and crispy on the outside. Serve with a side of ketchup or whatever dipping sauce you like. Enjoy!⠀
