This is my AMAZING bootcamp from tonight. Five something this morning was a long time ago. The week is nearing the end and I start to get tired and ready for the weekend. Pre workout tonight I was tired, a little exhausted and had a slight headache. I could have easily stayed home. NOPE! I know what my workout does for me! I walk into a room full of fun people, awesome music, and an amazing workout 🏋️‍♀️. Post workout : I am PUMPED UP, ENERGIZED, and NO HEADACHE! What an amazing therapy plus I torched 504 calories! Thank you for such motivation!

Don't make it complicated.

Yes! It's awesome to concoct an ethnically correct healthy dish--I usually go for salads at lunchtime. Think sesame Thai basil salad with peanuts, lemongrass, and mint leaves or Tex-Mex chicken fajita salad bowl for some south of the border action, but what if you haven't planned? Who has all that stuff on hand anyway? Here's my solution:

Check out my lunch.... I call this the Southern Girl Mediterranean Tropical Meatloaf on mixed greens special. AKA the Don't tell me this doesn't look better than whatever came out of that fast food bag in your trashcan (joking probably).

What did I use? Whatever I had left in my fridge and pantry after days of not grocery shopping. This has 50/50 mixed greens, kale, fat free Feta, slivered almonds, coconut flakes, some stevia with a couple shakes of balsamic, olive oil, and sweet peaches. I threw some brown rice on the side for some carbs, and yes...I went there. I totally Pretty Watered (that's my little Oklahoma home town) this salad up with a big slice of turkey meatloaf (you can find that recipe in previous posts). It. Was. BOMB. And it fit my macros yo'! 🙌🏼

Don't be scared to be creative. I say the more ingredients, the less dressing. Thanks to for inspiring this post.
