π₯£ Creamy Chicken & Orzo Soup π²
This comforting, creamy chicken and orzo soup is packed with veggies, tender chicken, and a hint of lemon!
Ingredients:
β’ 2 tbsp olive oil
β’ 1 lb boneless, skinless chicken breasts, cubed
β’ 1 tsp salt
β’ 1/2 tsp black pepper
β’ 1 small onion, finely chopped
β’ 3 cloves garlic, minced
β’ 2 medium carrots, diced
β’ 2 celery stalks, diced
β’ 6 cups chicken broth
β’ 1 cup orzo pasta
β’ 1 cup heavy cream
β’ 1/2 tsp dried thyme
β’ 1/2 tsp dried rosemary
β’ 1 cup fresh spinach leaves
β’ Juice of 1 lemon
β’ Fresh parsley, for garnish
Directions:
1. Cook Chicken: In a large pot, heat olive oil over medium heat. Add chicken, season with salt and pepper, and cook until golden and cooked through, about 5-6 minutes. Remove and set aside.
2. SautΓ© Veggies: In the same pot, add onion, garlic, carrots, and celery. SautΓ© until veggies are softened, about 5 minutes.
3. Add Broth and Orzo: Pour in chicken broth and bring to a boil. Add orzo pasta and cook until tender, about 8-10 minutes.
4. Finish with Cream & Herbs: Reduce heat to low. Stir in heavy cream, thyme, and rosemary. Return chicken to the pot and add spinach, stirring until spinach wilts.
5. Season & Serve: Add lemon juice for a bright finish. Ladle into bowls, garnish with fresh parsley, and serve warm.
