Tabbouleh Salad
This fresh, herb-packed salad is a Middle Eastern classic, perfect for a light meal or side dish in Madinah’s warm weather. It’s loaded with parsley, mint, bulgur, and veggies for a zesty, healthy twist—different from creamy potato salads but equally delicious.
Ingredients:
• ½ cup fine bulgur wheat
• 3 medium Roma tomatoes, very small diced
• 1 English cucumber, very small diced
• 2 bunches parsley, stems partially removed, washed, dried, and very finely chopped
• 12-15 fresh mint leaves, stems removed, washed, dried, and very finely chopped
• 4 green onions (white and green parts), very finely chopped
• Salt to taste
• 3 tbsp lemon juice (or lime juice for a tangier flavor)
• 3 tbsp extra virgin olive oil
• Optional: Romaine lettuce leaves for serving
Step-by-Step Procedure:
1. Rinse the bulgur wheat and soak it in water for 5-7 minutes. Drain thoroughly, squeezing out excess water by hand. Set aside.
2. Finely chop the tomatoes, cucumber, parsley, mint, and green onions. Place the diced tomatoes in a colander to drain any extra juice.
3. In a large mixing bowl, combine the chopped vegetables, herbs, and green onions. Add the drained bulgur and season with salt. Gently mix everything together.
4. Drizzle in the lemon juice and olive oil, then mix again to coat evenly. Let it sit for a few minutes to allow flavors to meld. Serve chilled or at room temperature, optionally on romaine lettuce leaves.
