Because mama still has to work, hydrate, get her steps in, fold laundry, find the missing socks, answer emails… and somehow make dinner too 😂
So this quick leftover orzo ended up being PERFECT.
One pan.
20 minutes.
Minimal effort.
Actually delicious.
RECIPE:
• Sauté 1 diced onion until caramelized
• Add garlic + leftover roasted veggies
• Add 2 chopped cooked chicken breasts
• Stir in 1½ cups orzo for 2 mins
• Add 2½–3 cups chicken broth, ¼ cup tomato sauce, turmeric, paprika, crushed red pepper, salt + pepper
• Simmer about 10 mins until creamy
• Finish with a splash of milk, Parmesan, and lemon 🤍
