Monday Meatless Meal Ideas
We love eating all Ethnic varieties of meals and the fact that we can make any recipe plant strong with plenty of meat substitutes from tofu, tempeh, beans and even mock meats from time to time for entertainment food or give meat eaters that "authentic" feel, while staying heart healthy, cruelty free and longevity oriented.
Here's a Greek meal we made for a gathering last week with our kids and Grandkids while also experimenting for this coming Sunday's Plant Powered Vegan Cooking Class.
We had Greek Vegan Spinach Pie (Spanokopita) made with 13 cups of fresh chopped kale from the LCY mega garden, crumbled tofu and Violife Feta Cheeze, Roasted Greek Sweet Potatoes made with maple syrup, Earth Balance dairy free butter, and cinnamon, Greek style beans with Rosemary from the garden, Sri's Garden Salad with homemade fan favorite Tahini Dressing, Sri's Cucumber Salad, SriMade Hummus and veggies from the garden, Greek Olives, and not shown Danika's Summer Berry Pie with Gluten Free Almond Crust.π
We're looking forward to another yummy meal that we all have a blast making together as we learn alot also at this Sunday's LCY Plant Powered Cooking Class.
