🫐 Fresh Blueberry Salsa 🫐
This sweet-and-savory salsa is incredibly easy to make and tastes amazing on grilled chicken, fish, pork, tacos, burgers, cream cheese and crackers, or simply eaten with tortilla chips!
Ingredients
* 2 cups fresh blueberries
* 1 medium tomato, diced
* ¼ cup red onion, finely diced
* 1 jalapeño, seeded and minced (leave seeds for more heat)
* ¼ cup fresh cilantro, chopped
* Juice of 1 lime
* 1 tablespoon honey (optional)
* ¼ teaspoon salt
* Pinch of black pepper
Directions
1. Place about half of the blueberries in a bowl and lightly mash them with a fork.
2. Add the remaining whole blueberries, tomato, red onion, jalapeño, and cilantro.
3. Stir in the lime juice, honey, salt, and pepper.
4. Refrigerate for 15–30 minutes to allow the flavors to blend.
5. Serve chilled.
Serving Ideas
Spoon over fish or shrimp tacos
Top grilled salmon or mahi-mahi
Serve over grilled chicken breasts
Pour over a block of cream cheese and serve with crackers
Use as a burger topping
Add to grilled pork tenderloin or pork chops
Mix into avocado for a blueberry guacamole twist
This recipe keeps well in the refrigerator for about 2–3 days, though it rarely lasts that long once people start eating it. 😋🫐💙
