When people ask why I’m at the gym so often… 🤣

Because if I stay home too long, things start getting weird.

I’ve already opened the fridge 12 times, reorganized something that didn’t need reorganizing, and convinced myself I’m bored, hungry, and productive all at the same time. 😂

The gym keeps me sane… and probably makes me easier to live with. 💪

Anyone else get a little stir-crazy when they stay home too long? 🙋‍♀️

Foodie Fitness Friday: Zucchini & Mint Soup with Poached Eggs

Ingredients

• 3 medium zucchini, sliced into ¼-inch (5 mm) rounds

• 1 fresh green onion (spring onion), thinly sliced

• 1 small bunch fresh mint

• Zest of ½ organic lemon

• 1 tablespoon lemon juice

• 1 tablespoon extra-virgin olive oil

• 1 garlic clove, lightly crushed

• Salt, to taste

• Freshly ground black pepper, to taste

• 2 fresh eggs

• 1 teaspoon white wine vinegar

• Small piece fresh chili pepper, finely chopped (optional)

• 2½ cups (600 ml) hot water

Instructions

1. Prepare the Zucchini Base

Slice the zucchini into rounds about ¼ inch (5 mm) thick. Thinly slice the green onion.

Heat the olive oil in a large saucepan over medium heat. Add the green onion and garlic clove. Cook gently for about 2 minutes until softened, being careful not to brown them.

2. Build the Aromatic Broth

Add the zucchini and sauté for 2–3 minutes, stirring occasionally.

Pour in the hot water. Add the lemon zest, chili pepper (if using), and half of the mint leaves.

Bring to a gentle boil, then reduce the heat and simmer for 8–10 minutes, until the zucchini is tender but still bright green. Season with salt.

3. Prepare for Poaching

Using a slotted spoon, remove about half of the zucchini and set aside for serving.

Remove and discard the garlic, cooked mint leaves, and chili pepper.

The remaining zucchini should stay in the broth. Stir in the white wine vinegar and lemon juice.

4. Poach the Eggs

Keep the broth at a very gentle simmer (not a rolling boil).

Crack one egg into a small bowl. Stir the broth gently to create a small whirlpool and carefully slide the egg into the center.

Repeat with the second egg, placing it a few inches away.

Cook for 3–4 minutes, until the whites are set but the yolks remain soft and runny.

5. Serve

Carefully transfer a poached egg into each warm soup bowl.

Ladle the broth and reserved zucchini around the eggs.

Garnish with:

• Fresh mint leaves

• Freshly cracked black pepper

• A drizzle of extra-virgin olive oil

• A few thin strips of lemon zest

Serve immediately.

The funny part? I’m actually a morning person. 🤣

There’s just something about being up before the rest of the world, getting a workout in, and starting the day with good people and good energy. 💪☕

Now ask me how I feel at 8:00 PM… that’s a different story. 😂

📋 “Member in training. Do not talk to her. Do not distract her.”

📋 “Don’t talk to me either. I already don’t know how to count!”

Honestly, these signs aren’t for the members… they’re for the coaches. 😂

The second someone asks me a question while I’m counting:

“7… 8… 9…”

“Hey Margherita, quick question…”

“Well, congratulations everyone, we’re starting over at 1.” 🤣💪

🚨 Even Dr. Kelly Lupo, Naturopathic Doctor 👩‍⚕️, says one of the best things you can do for your health as you age is strength train. 💪

If you’ve been diagnosed with osteopenia or osteoporosis, movement matters. Strength training can help support bone health, improve balance, build muscle, and reduce the risk of falls and fractures.

And here’s something many people don’t realize: weight-bearing activities count too. 🚶‍♀️✨ Even walking with a weighted vest (when appropriate and approved by your healthcare provider) can help provide the stimulus your bones need to stay stronger.

But fat cells? Apparently they signed a lifetime contract. 😂

Good news though… we’re still showing up, moving our bodies, laughing through the chaos, and doing our best one workout at a time. 💪❤️

Who else feels personally victimized by their fat cells? 🙋‍♀️🤣
