🥢🍲I’ve streamlined this egg roll inspired recipe to make it a fast and easy meal to add to your rotation.

😋It’s perfect for a quick weeknight meal OR as a meal prep lunch!

😋TIP: If you are super busy, you can pick up some precooked frozen rice (brown or cauliflower) or quinoa at the grocery store – or cook up a batch during the weekend to keep on-hand in the fridge for a quick meal.

Super Simple Egg Roll in a Bowl
(serves 4)

16 oz (455 g) lean ground turkey or tofu (drained & cut into cubes)
3 Tbsp coconut aminos, divided
1 Tbsp avocado oil
2 12 oz (340 g) bags broccoli slaw
2 cloves garlic
1 Tbsp fresh ginger
1 Tbsp rice vinegar
2 tsp hot sauce
2 tsp sesame oil
To serve: 2 cups (350 g) cooked rice or quinoa

Place the turkey or tofu in a mixing bowl and add 1 Tbsp of coconut aminos, stirring to break up the meat and combine. Let sit for 10 minutes.

Heat a large skillet over medium-high heat. Add the oil. Add the turkey or tofu and cook, further breaking apart the meat into small bits, for about 5 minutes, until it is fully cooked.

Reduce the heat to medium-low. Add the broccoli slaw, garlic, and ginger and stir fry for 2-5 minutes, until the vegetables reach your desired level of softness.

Add the rice vinegar, hot sauce and sesame oil, black pepper, and remaining 2 Tbsp of coconut aminos, stirring to combine. Continue to cook for 1-2 more minutes. Taste and adjust seasonings.

Serve hot over ½ cup (88 g) of rice or quinoa.

😋Crunchy, salty, savory – delicious!

This probably doesn’t count as an actual recipe …
.. but it definitely counts as a tasty & satisfying mid-afternoon snack that will hold you over till dinner!

🥒It’s refreshing, contains only “whole” foods, and it’s super flavorful. Also, the cucumber is a nice change of pace from celery and carrot sticks (if you eat celery that is :-D).

Seriously though, if you know me, you know I love cucumbers, and I love hummus (the spicier the better for me). Try this and you will LOVE it!

Cucumbers & Hummus
(serves 1)

1 medium cucumber
2 Tbsp hummus – your favorite flavor

Peel the cucumber and cut it into spears. Place the hummus in a small bowl.

To eat: dip the cucumber into the hummus and enjoy!

Here’s a little info about some popular seasonal beverages that can help you decide whether – or how much – to indulge!

Plus, the sweetness overload can take your blood sugar levels on a roller coaster that leaves you feeling exhausted once the ride is over.

16 oz (475 ml) Starbucks Peppermint Mocha: 440 calories, 16 grams fat, 54 grams sugar (that's more than a 12 oz Mountain Dew!!)

You are in for a TREAT!

This is a GREAT (& healthy) version of classic Asian lettuce wraps – light, tasty, and super easy to throw together.

Ground Turkey Lettuce Wraps
(serves 4)

2 Tbsp sesame oil
4 cups (350 g) sliced mushrooms
2 cloves garlic, minced (optional)
1 tsp fresh ginger, minced (optional)
1 lb. (450 g) 93% lean ground turkey
3 Tbsp coconut aminos
Sea salt and ground black pepper to taste
16 (or so) big butter lettuce leaves

Heat the sesame oil in a large skillet over medium-high heat. Add the mushrooms and cook for 5 minutes, until soft, stirring occasionally. Add the optional garlic and ginger and cook for another 1-2 minutes, stirring constantly.

Add the ground turkey and cook, stirring frequently, until browned through (about 6 minutes). Stir in the coconut aminos. Season with salt and pepper to taste.

Place 4 lettuce leaves on 4 separate plates. Divide the turkey mixture between each of the leaves, wrap ‘em up, and enjoy! YUM.
