Warm weather = Salad Season!
Salads are a great option for those hot days ahead. But that doesn’t mean they have to be boring. Try out this fun (and cold) twist on fajitas with this Black Bean Fajita Salad. It makes for an easy, flavorful option for lunch or dinner. Try it out!
Ingredients:
3 tbsp. avocado oil
2 tbsp. lime juice
1 tsp. ground cumin
¾ tsp. chili powder
½ tsp. garlic powder
Salt and Pepper
1 (15-ounce) can low-sodium black beans, rinsed
½ cup chopped red bell pepper
½ cup chopped yellow bell pepper
⅓ cup chopped red onion
3 cups roughly chopped arugula
1 cup broken tortilla chips
¼ cup chopped fresh cilantro
Whisk oil, lime juice, cumin, chili powder, garlic powder, salt, and pepper together in a large bowl. Add the rinsed beans, bell pepper, and onion; stir to coat. Let it marinate for 10 minutes. Add the arugula, broken chips, and cilantro. Toss well and serve immediately.
