INGREDIENTS
21 ounce squash (raw, chopped)
14 ounce broccoli (raw, chopped)
3.6 ounce cucumber (sliced into rounds)
2.2 ounce cherry tomatoes (sliced in half)
2.9 ounce goat cheese
0.4 fl.oz olive oil (2 tsp)
1.0 garlic clove (minced)
2.0 tsp olive oil (dressing)
0.4 fl.oz brown balsamic vinegar (dressing)
0.2 ounce whole grain mustard (dressing)
0.2 ounce dried rosemary
1.0 Pinch Himalayan salt
πͺ INSTRUCTIONS - 40 Min - Makes 2 servings
1. Preheat oven to 350 degrees F and line a baking tray with baking paper. Place the squash on the tray.
2. Combine the olive oil and garlic in a small bowl. Using a pastry brush, brush the squash with half the amount of olive oil. Season with Himalayan salt and rosemary.
3. Bake the squash in the oven for 15 minutes. Remove the squash from the oven and add broccoli onto the tray. Using the pastry brush, brush the broccoli with the remaining olive oil and garlic mix. Place the broccoli and squash back in the oven for a further 10-15 minutes. Once cooked remove from the oven and set aside.
4. In a bowl, add the cucumber, cherry tomatoes, squash, broccoli, and goat cheese.
5. In a separate small bowl combine the olive oil, wholegrain mustard, and balsamic vinegar
6. Drizzle the dressing over the top.
7. Serve.
